Sarah's ridiculously tender herb and garlic chicken is a wonderful recipe for any occasion. This recipe produces a moist and succulent chicken breast bursting with multidimensional amazing flavors. Garlic, lemon, paprika and dill layer themselves beautifully within each bite of the thick and meaty chicken breast. Yum!
Sarah’s Ridiculously Tender Herb and Garlic Chicken
Difficulty: Medium-Easy
Ingredients:
1 lean chicken breast
1 tablespoon butter
1 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cloves of garlic; peeled and finely chopped
1 teaspoon dill
1 teaspoon paprika
1 1/2 teaspoon rosemary leaves
1/4 teaspoon lemon pepper
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon Italian spices
Execution:
Preheat oven to 325 degrees
Take chicken breast in your hand and wash under warm water. Simultaneously use your fingers to stretch the breast horizontally. You should find a tendon in the middle of the breast which can be used as a guide. Simply place your thumbs on this tendon and pull outward.
Place stretched chicken breast in the middle of a piece of aluminum foil that is large enough to be folded over to create a baking pouch. Do not fold the aluminum foil yet, only use the previous statement as a reference for measuring the foil. Remember, it’s better to have a piece of foil that is too long than too short.
Thoroughly wash your hands and any surface that may have come in contact with the chicken. It is important to wash your hands after every time you touch the chicken to prevent salmonella.
Fold the sides of the aluminum foil up to create a boarder around the chicken that will prevent any of the herbs or lemon juice from spilling.
Pour the lemon juice directly over the chicken before applying the salt and pepper evenly on the top of the chicken breast.
Next, place half of the chopped garlic directly under the chicken breast and distribute the remainder on the top half of the breast.
Evenly distribute the remainder of the spices on the top half of the chicken breast so the chicken breast is evenly covered in herbs. Feel free to place some rosemary leaves underneath the breast for added flavor.
Place the pat of butter directly on top of the seasoned chicken breast before encapsulating the meat by folding the aluminum foil around the entire breast. Try to do this in a manner that you may easily undo to check on the chicken in the future.
Place the chicken breast in the middle rack of the pre-heated oven and cook until the meat reaches an internal temperature of 325 degrees or about twenty or twenty five minutes.
As a simple tip, once the odors of the herbs have permeated your home, the chicken should be properly cooked within the next five minutes. Enjoy!
