With today’s economy, everyone is looking for ways to cut back. Numerous businesses are not doing as well as they once were and job loss statistics are staggering, with more losses since the World War II era. It doesn’t look like it is going to improve in the near future with predicted job losses topping at almost 3 million by the middle of 2009. To top it off, there has been a large increase in food prices and going to the grocery store can be a lot more expensive than it used be. For most families, finding inexpensive meals is even more important now than ever. Here is an inexpensive entrée that is delicious, healthy and the family won’t even recognize how cost effective it is! Ingredients
Barbecue Sauce
** This recipe serves 4 to 6 adults. Directions:Mix together the contents of the barbecue sauce and put the contents in a saucepan. Simmer for approximately twenty minutes while stirring every so often. (If you don’t have all of the ingredients on hand, feel free to use a bottle of a favorite barbecue sauce.) If the chicken legs have skin, use a paper towel and grab one side of the skin and tear it off. (Using a paper towel makes removing the skin a lot easier). Season the chicken with salt and pepper. Turn on the gas grill on low. Put the barbecue sauce in a bowl and stir with a basting brush (a good quality with natural and synthetic bristles). Place the chicken on the grill on low heat. The trick to barbecuing chicken legs is to grill them on low heat, slowly and continually baste the chicken with barbecue sauce. After 5 minutes of cooking, add the barbecue sauce and turn the chicken. Do this every five minutes while barbecuing and after every other “basting” close the top of the grill to let the heat surround the chicken and to help cook the chicken thoroughly. Make sure a flame of fire does not burn the chicken. (You can always use a spray bottle of water to ensure this doesn’t occur). Cook the chicken for at least 45 minutes until it is completely done. Continually adding the barbecue sauce keeps the chicken moist! What to Serve With Barbecued Chicken LegsThere are numerous different options that are can be served with this entrée. Consider serving root mash with the entrée and corn on the cob. A fresh salad is always accompanies chicken well and/or other inexpensive sides such as a baked potato and frozen corn.
