Reach toward heaven to pick apples, dig in the earth for potatoes. Recipes to cook them separately or cook them together for a heavenly taste combination.
Apples are a favorite, and fried apples are just one way to enjoy apples. The history of apples is ancient. While Eve did seduce Adam with fruit, it can't be said with any certainty that the fruit was an apple. Potatoes, a perennial staple, have a shorter history than apples. They have a high nutritional value, containing more potassium than a banana, iron, vitamins B and C, and fiber. The combination of apples and potatoes is uncommon, but uncommonly good.
Fried Apple Recipe
apples
sugar, preferably natural cane (turbinado) sugar
raisins or dried cranberries (optional)
1-2 TBS bacon grease or shortening
Slice the apples and place in a microwave safe dish. Microwave for 2 to 3 minutes, until just softened. The time will depend on the type of apple used.
Heat a skillet, preferably cast iron, to medium temperature and add the fat and apples.
Sprinkle the apples with sugar and toss frequently. If the apples are sour, more sugar will be needed.
Add raisins or dried cranberries if desired.
Cook until the apples and sugar are caramelized and nicely browned without burning. They burn easily, so watch them carefully.
Fried Potato Recipe
These are great with breakfast.
1large baking potato
2 strips of thick cut bacon
1/4 to 1/2 onion, chopped
sprig of fresh rosemary, chopped
salt and pepper
Poke holes into the scrubbed potato with a fork. Microwave just until tender, 5-6 minutes.
Chop bacon strips into small pieces and saute the bacon with the onion in a cast iron skillet.
Using an oven mitt, remove the potato from the microwave and cut into cubes.
Add the potatoes and rosemary to the onions and bacon.
Cook until the potatoes are nicely browned and crisp, adding a little more bacon grease if needed. Salt and pepper to taste.
Heaven and Earth Recipe
2 to 3 strips thick cut bacon
1/2 onion, chopped
1 large baking potato
2 med apples
