Improve on your everyday barbecue recipes with the following recipes for Bacon Cheddar Cheeseburgers, Potato Salad and Flavorful Italian Pasta Salad to make Memorial Day

Memorial Day is a great time for that first big neighborhood barbecue of the season. With high gas prices across the country, chances are you too will stay home and cook out. Are you looking to add some flavor to your traditional Memorial Day barbecue recipes? Try the following recipe for bacon cheddar burgers and you may never eat a plain burger again. A little extra effort can add a lot of extra flavor to the traditional dishes you love, but wish were a bit more exciting. Round out your picnic with delicious and different recipes for potato salad and pasta salad. Adding a few extra ingredients to these traditional dishes brings gourmet to everyday without a lot of stress or effort.

Bacon Cheddar Cheeseburgers

Ingredients

(makes 4)

  • 1 1/2 pounds ground beef
  • 1 teaspoon Montreal Steak Seasoning
  • 1 teaspoon chopped parsley
  • 3/4 cup shredded cheddar cheese
  • 2 tablespoons diced red onion
  • 6 slices bacon

Cook the bacon until cooked through but not crisp. Let cool. Chop the bacon into 1/2-inch pieces. Mix the bacon, onions, parsley and cheese. Blend meat with seasoning. Form 8 patties out of meat. Place one fourth of cheese/bacon mixture in center of four patties and top with remaining four patties. Crimp sides to make four "stuffed" burgers. Grill until cooked to desired doneness. Top with Heinz 57 sauce, Mayonnaise and tomato, lettuce, pickles and onion as desired.

Yummy Potato Salad Recipe

Ingredients

  • 12 red potatoes
  • 3 tablespoons vinegar
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon hot sauce
  • 2 tablespoons lemon juice
  • 1/3 cup mayonnaise
  • 1/4 cup diced green onion
  • 1/3 cup diced celery
  • 1/3 cup chopped green olives
  • 2 hard boiled eggs, chopped
  • 3 tablespoons diced parsley
  • 1 teaspoon seasoned salt
  • Boil potatoes until cooked but firm. Let cool. Dice into 1/2 -inch chunks. Put potatoes in large bowl, and cover with vinegar and lemon juice. Cover and let sit for ten minutes. (Coating the potatoes with vinegar and lemon juice keep in the moisture so you don't need to add a lot of mayonnaise). Stir in remaining ingredients. Cover and chill before serving.

Flavorful Italian Pasta Salad

Ingredients

  • 16 oz. noodles of your choice
  • 1 teaspoon balsamic vinegar
  • 2 tablespoons olive oil
  • 1 package Italian seasoning mix
  • 1 can diced tomatoes
  • 1/2 cup Parmesan cheese
  • 1/2 cup diced black or Kalamata olives
  • 1 whole roasted red pepper, cut into strips

Cook pasta according to al dente directions. Rinse with cool water. Place in large bowl and cover with oil and vinegar. Add Italian seasoning and tomatoes with some of their juices (enough to make a nice sauce, but not too runny). Stir in olives, red pepper strips and Parmesan cheese.
