Beef Tournedos & French Brie with Cranberry Jus

Beef Tournedos with Honey Caramelized Onion, Brie Cheese & Cranberry Jus

This recipe is so quick and simple to prepare but will have your guests thinking you spent hours in the kitchen. Be sure to use only the finest ingredients and it all starts with the beef!

Ingredients for 4 servings

Method:

  1. Sauté the onions in a skillet with half the butter (4oz) and the honey for about 3-5 minutes, until they caramelize, Set Aside
  2. Season the beef with salt and pepper; heat the remaining butter in a skillet; sear the beef medallions for one minute on each side; finish cooking in the oven at 350 degrees F
  3. Remove the Beef from the Pan when finished and deglaze the pan with the demi glace. Add the blueberries and set on low heat.
  4. Top each tenderloin medallion with equal portions of the onions and then add 2oz of the Brie to each
  5. Melt in the Oven or with a blowtorch. When the cheese has melted serve immediately with the sauce and your favorite side dish.
