A party menu doesn't have to be complicated to be fabulous. The flavors of Swiss cheese, crab, shrimp, scallops and lobster blended together in a fondue pot are amazing.
Any time of year is perfect for a party around the fondue pot, or pots. When making a seafood and cheese fondue recipe, most likely you'll want a chocolate fondue for dessert. Two fondue pots will take you from dinner to dessert.
A nice way to begin the meal is with a cool, crisp salad, a Greek or Caesar goes well. The following seafood cheese fondue serves 6-8 people.
Seafood Cheese Fondue
Ingredients:
1 clove of garlic, broken in half
2 cans cream of lobster soup
1 cup low fat milk
1 lb. Swiss cheese, grated
Paprika
French bread cut into 1" cubes
Steamed shrimp, scallops, crab, lobster chunks
ground pepper
Directions:
Rub the pot with garlic. Heat soup in pot and beat until smooth. Slowly add milk and beat again. Add cheese slowly, stirring as it melts. Sprinkle with pepper and paprika and place over burner.
To serve, offer fondue forks for dunking bread and seafood chunks into the mixture.
Gruyere Fondue
Serves 4
Ingredients:
1 clove of garlic, halved
2 cups dry white wine
3/4 lbs. gruyere cheese, grated
1/2 tsp salt
1/8 tsp cayenne pepper
dash of nutmeg
2 Tblsp cognac
French bread, pear wedges, apple wedges
Directions:
Rub pot with garlic, add wine and heat on stove until it begins to bubble.
Add cheese a little at a time until it melts.
Add the balance of the ingredients, stirring well.
To serve: spear bread, pears, apples and dip in cheese.
Swiss Fondue
Serves 4
Ingredients:
1 clove of garlic, halved
1 cup of dry white wine
1 lb of Swiss cheese, grated
French bread cut in 1" cubes
2 tsp cornstarch
1 tsp Worcestershire sauce
dash of nutmeg
1 tsp dry mustard
salt to taste
Directions:
Rub pot with garlic, add wine and heat on stove until bubbles begin to rise. Don't boil.
Toss cheese with cornstarch and add to hot wine, handful at a time, cook over low heat until cheese is melted and smooth. Stir constantly. Add other seasonings and salt to taste.
Light burner, set pot on unit, and spear bread with fondue fork.
Swiss Fondue Variation
Serves 4
Ingredients:
1 clove of garlic, halved
1 cup dry white wine
1 lb of Swiss cheese, grated
French bread in 1" cubes
2 tsp cornstarch
4 Tblsp Kirsch (or brandy)
ground black pepper
Directions:
Rub pot with garlic, add wine and heat on stove until bubbles begin to rise. Don't boil!
Toss cheese with cornstarch and add to hot wine, a handful at a time, cooking over low heat until cheese is melted and smooth. Stir constantly.
Stir in Kirsch and sprinkle with pepper.
Light burner, set pot on unit and spear bread with fondue forks.
