Handmade Chocolate Cookie Fudge: a Quick and Easy gift

The festive season is a time of indulgence - and this Chocolate Biscuit Fudge makes a perfect gift for unexpected guests.

Chocolate Cookie Fudge is quick and easy to make, and many of the ingredients can be substituted; and many variations can be added to the basic mixture based on one’s individual tastes.

Ingredients

The ingredients to make the Chocolate Cookie Fudge are very simple, and include:

  • 1 packet Maria Biscuits (or any thin-rolled sweet cookies – including chocolate chip cookies that are easy to break into pieces)
  • ½ Lb Butter or margarine
  • 1 packet (1 Lb) of icing sugar – well sifted
  • 3 Oz Cocoa – also sifted
  • 1 medium-sized egg, beaten

Ingredient Variations

Additional ingredients can include coconut sprinkles (to sprinkle on top during the cooling process);

  • vanilla extract (approximately one teaspoon added to the heated mixture); crystallized figs.
  • small (or chopped) nuts (not too many – otherwise the mixture will not set) added after the egg.
  • chocolate chips (which can be sprinkled onto the cooling fudge and pressed into the mixture with a cold metal spoon).

Instructions

Putting together this fudge is very easy – and children can be involved in the cooking process by smashing the cookies for you; making this a family gift and shared indulgence.

  1. Break the biscuits into small pieces and set aside.
  2. In a deep saucepan, melt the butter/margarine on low heat.
  3. Once the butter/margarine has melted, stir in the sifted sugar and cocoa - while still keeping the saucepan on low heat – until the mixture becomes smooth. The edges of the mixture will become shiny and glisten as the sugar and butter/margarine melt together.
  4. Add the egg to the mixture and stir rapidly (to avoid having the egg cook separately from the fudge mixture), and then remove from the heat
  5. Stir the cookies into the mixture, making sure to coat each one as well as possible.
  6. Either spoon the mixture into a greased pan, or spoon out onto flexible chopping mats (which allow for the easy removal of the fudge squares) and allow to cool.
  7. This mixture will make approximately 60 smaller blocks of Chocolate Cookie Fudge; and should be stored in the refrigerator.

Tips

Fudge is generally regarded as difficult to make if you have never tried it before, but this fudge is truly easy to put together. Just watch out that when adding the sugar to the butter/margarine, that no huge lumps of sugar form; and that the mixture receives enough heat to melt the sugar into the butter/margarine and cook the egg – but be careful of keeping it on high heat as this will burn the mixture. If the mixture doesn’t set properly, it can generally be remedied by placing it all back into the saucepan and heating it until the sugar and butter/margarine fuse together completely.

Presentation

Once the blocks have been cut, it is simply a matter of placing some fudge into an old bottle or jam jar and wrapping a festive ribbon around the lid to create a quick and easy handmade gift straight from your kitchen.
