Quick & Easy Recipes for Leftover Beef

Instead of wasting leftovers, use leftover roast beef, steak, hamburgers, or meatballs to create entirely different meals.

After most meals there is always a little of this and a little of that left over, but these leftovers are often wasted because it is difficult to come up with creative recipes for leftovers. These tips and recipe suggestions for various leftover beef dishes will take little effort and will turn leftovers into entirely different meals.

  • Use Leftover Steak or Roast Beef to Create a Steakhouse Salad: Thinly slice the leftover portions of steak or roast beef. Place the beef slices on a bed of mixed greens and various vegetables of choice (peppers, cucumbers, tomatoes, etc.). Sprinkle crumbled Bleu cheese and French’s French Fried Onions overtop of the salad, and top with desired dressing.
  • Use Leftover Steak or Roast Beef for Making a Dinnertime Breakfast: Dice leftover beef and create Steak & Cheese Omelets for something different at dinnertime.
  • Also, consider using the diced beef to make a hearty breakfast skillet. Add diced onions and peppers to a skillet coated with oil or butter over medium heat. Once the peppers and onions start to soften, add home fries to the skillet and continue sautéing. While this is cooking, in a medium bowl scramble eggs (the amount of eggs will depend on how many servings are being prepared). Add the eggs and diced beef to the skillet. Once the eggs are cooked stir in shredded cheddar cheese, remove from heat, and serve.
  • Use Leftover Roast Beef for Barbeque Beef Sandwiches: If there is a large portion of a roast leftover, use a food processor or blender to shred or grind the beef. Place the shredded beef in a saucepan or in a crock-pot with chopped onions and barbeque sauce and allow the meat and sauce to simmer over low heat. Once thoroughly heated serve the barbecued beef on round rolls.
  • Use Leftover Hamburgers to Make Meat & Mashed Sandwiches: This easy leftover meal idea requires leftover hamburger patties, mashed potatoes, and beef gravy. Prepare or heat mashed potatoes (use instant potatoes or make homemade mashed potatoes) and beef gravy (use leftover gravy, purchase prepared gravy, or use a gravy mix to prepare the gravy). Slice leftover hamburgers horizontally to create two thinner hamburger patties, heat the patties in the microwave. Create a “sandwich” by placing a scoop of mashed potatoes in between two of the hamburger patties and top with gravy.
  • Use Leftover Ground Beef, Meatballs, or Meat Sauce to Make Parmigiana Stuffed Mushrooms: If using leftover meatballs, use a fork to crumble the meatballs. Combine ground beef or crumbled meatballs with enough tomato or spaghetti sauce to coat the meat. Add a handful of grated parmesan cheese to the meat and sauce mixture. Clean mushrooms and remove the stems (use white mushrooms or portabella mushrooms). Fill the mushroom caps with the meat, sauce and cheese mixture and place on a baking sheet. Top the stuffed mushroom caps with shredded mozzarella cheese and bake in a preheated 350-degree oven. Bake the mushrooms for 15 to 20 minutes.
