Herbed Spinach Ball and Microwaved Warm Dip Recipes

Need snacks for last-minute holiday company? Guests will rave about these two tasty warm spinach hors d' oeuvre recipes that can be made ahead and frozen for later use.

Herbed Spinach Ball Recipe

Thyme is the magic ingredient in this no-miss spinach ball recipe that can be prepared in advance and stored until needed.

Spinach Ball Ingredients

  • Two 10 ounce packages of frozen, chopped spinach
  • Three cups herb seasoning stuffing mix
  • Six eggs
  • 3/4 cup butter
  • One large onion, finely chopped
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon pepper (or to taste)
  • 1 teaspoon garlic salt (or to taste)
  • 1/2 teaspoon thyme (or to taste)
  • Butter or shortening (for greasing the pan)

Cooking Instructions

  • Pre-heat an oven or toaster oven to 325 degrees.
  • Place both packages of frozen chopped spinaches in a large sauce pan, and heat according to package instructions.
  • Drain the spinach in a large collander and set aside.
  • Place eggs in a bowl and beat well.
  • Melt the butter (use a microwave to save time)
  • Mix the eggs, butter and onion and set aside.
  • In a large mixing bowl, combine the herb stuffing, parmesan cheese and spices.
  • Use a table mixer to combine the drained spinach, egg mixture and dy ingredients. Mix until all of the stuffing has been moistened, and the batter holds together nicely.
  • Grease a large cookie sheet.
  • Roll mixture into two-inch balls and place as two-inch intervals on a cookie sheet.
  • Bake the spinach balls for 15-25 minutes or until golden brown and spingy to touch.

Place any extra spinach balls in a plastic freezer container with wax paper or parchment paper between layers. Spinach balls can stay frozen for several months until ready for use.

Microwave Spinach Dip

Like any good comfort food, this hors d'oeuvre recipe is warm and satisfying.

Spinach Dip Ingredients

  • one 10 ounce package of frozen chopped spinach
  • 1/2 cup of mayonnaise
  • 1/2 cup of cream cheese
  • one cup of sharp cheddar cheese
  • one finely chopped sweet onion
  • 1 tablespoon thyme
  • 3/4 tsp. of minced garlic (or to taste)

Cooking Instructions:

  • Prepare frozen chopped spinaches according to package instructions.
  • Drain the spinach in a large collander.
  • Use a food processor to combine all ingredients. Process until creamy.
  • The mixture can be stored in the freezer until needed for use.

Heating Instructions:

  • If necessary, thaw the dip in the refrigerator or microwave.
  • microwave for 3-4 minutes on medium. Stir.
  • Continue heating on medium until mixture is hot.

Serve dip with hearty whole grain crackers or keep a crusty round loaf of fresh or frozen sourdough on hand to serve in a bread bowl. To make a breadbowl:

  • Preheat the oven to 350 degrees.
  • Use a serrated knife to cut a hole in the middle of the bread. Pull the resulting "plug" of bread from the loaf.
  • Brush the inside of the bread with olive oil.
  • Heat the bread bowl on a cookie sheet for 12-25 minutes, or until the inside of the bread bowl is lightly toasted.
  • Serve the microwaved spinach dip inside of the bowl with additional pieces of sourdough bread.
