Two Easy and Fast Southwestern Summer Salads

Cool salads are great for picnics, potlucks and parties during the spring and summer months. Broccoli Salad and Chicken Salad are two easy favorites in the Southwest.

When the temperature reaches 80 degrees, those living in the Arizona desert know it is the beginning of a very warm spell and time to eat lighter. Broccoli Salad is growing very popular among all ages in the Southwest, and most grocery store delis and many salad bars serve it. It’s a delightfully different take on that healthy veggie and a delicious way to get a generous dose of Vitamin C.

Chicken or Tuna Salad is also an easy and nutritious break from heavy meals when the weather starts warming up. Of course, the canned chicken can be replaced with home cooked shredded chicken to save money, but for quick and easy, keep a can or two on hand in the pantry.

Both salads would be perfect for a 4th of July tailgate party!

Easy Broccoli Salad

Serves 10-12

Prep time: 10 minutes

This recipe is fast and easy and will get raves! It's a great salad to nibble on all week long that tastes better day after day! Make it several hours before serving, overnight is even better!

Ingredients:

  • 1 lb (4cups) bagged broccoli florettes (washed)
  • 10 oz bag Broccoli Slaw (washed)
  • 1 cup raisins
  • 1 cup cashew halves or pieces
  • 3 green onions chopped (or red onion to preference)
  • 12-13 oz jar of Cole Slaw dressing
  • Optional: bacon bits

Directions:

  1. Wash broccoli florettes and broccoli slaw .
  2. Cut the larger florettes into smaller bite sized pieces.
  3. Add all ingredients and mix together.
  4. Pour Cole Slaw dressing over all and stir to coat.
  5. Refrigerate in air-tight container, occasionally shaking and turning container over to fully coat with dressing.

Each cup serving is approximately 233 calories and 21 carb grams.

The estimated cost is $1.00 - $1.25 per cup, less expensive with the right store sales.

(In the deli, Broccoli Salad will cost somewhere around $4.99 for approximately 2 cups, so this amount of salad would cost approximately cost $30 from the deli! )

Crunchy Chicken or Tuna Salad

Serves 3

Prep Time: 5 minutes

This Crunchy Salad recipe is the basic recipe which can be doubled or tripled based on the size of the family or event. The crunch and sweet taste is a refreshing variation of the old standard. Great on Blue Diamond Hazelnut crackers, rice cakes or croissants.

Ingredients:

  • 1 large (10 oz.) can white chicken or 1 large (12 oz.) can Albacore Tuna
  • 1/2 cup chopped apple
  • 3 T Sweet Relish drained
  • 2 T Mayo
  • 1/2 cup Cashew or Pecan Halves
  • May replace apple with: Craisins (dried cranberries) or halved seedless red grapes

Directions:

  1. Drain chicken or tuna (packed in water)
  2. Peel, seed and chop apple
  3. Mix with Relish, Mayo and nuts
  4. Chill and enjoy!

Each chicken serving is approximately 211 calories and 19 carb grams (depending on options)

Each tuna serving is approximately 246 calories and 19 carb grams

Three servings for approximately $3 - $4
