An Easy Guide and Recipe for Cooking Chicken Fried Steak

Cooking chicken fried steak -also called cube steak- is an inexpensive and delicious way to feed a hungry family on a budget.

Cube steak is one of the least expensive cuts of beef which makes it an excellent choice if one needs to fill the stomachs of a hungry family. Cube steak is truly a versatile and tasty piece of meat despite its reputation for being a tough and chewy. If prepared and spiced correctly, cube steak will taste just as delicious as most other cuts of beef; if not better. Follow the steps in this recipe to create a delicious and hearty chicken fried steak (cube steak).

How to Pick a Good Cut of Cube Steak at the Grocery Store:

It is important to buy the best cube steak from the market in order to ensure that the recipe turns out perfectly. Look for the best cube steak that can be found; there shouldn’t be any visible streaks of fat and it should be fairly thin. The thinner the steak, the crispier and more flavorful the end product will be. The perfect cube steak will be about the size of an adult palm, no more than 1/2 an inch thick, and free of tissue blemishes.

Sarah’s Succulent Cube Steak Recipe (Chicken Fried Steak)

Difficulty: Easy

Prep and Cook Time: Approximately 30 minutes

Ingredients:

  • Four cube steaks
  • 3 or 4 tablespoons of vegetable or extra virgin olive oil
  • 1 1/2 cups all purpose white flower
  • 2 cloves of minced garlic
  • 1/4 cup lemon juice
  • The needles from two 4 inch branches of fresh rosemary (approx 1 teaspoon)
  • 2 teaspoons sea salt
  • 2 teaspoons pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper

Execution:

  1. Remove the cube steak from its packaging and use a large mallet to tenderize and soften the cube steak. Pound each steak at least ten times on each side before lightly seasoning with salt and pepper. This step makes the beef more tender and workable
  2. Measure flour into a wide and shallow bowl; the flour should fill the bottom of the bowl to a depth of at least 1/2 an inch and the bowl must be wide enough for the largest cube steak to lay flat in the flour.
  3. Next, mix the salt, pepper, garlic powder, onion powder, paprika, cumin and cayenne pepper into the flour. Mix vigorously with a fork to ensure that all of the ingredients are completely integrated and evenly distributed.
  4. Now, heat the oil, lemon juice, rosemary leaves and garlic in a large frying pan over medium-high heat. It is essential that the bottom of the frying pan be completely coated with a thin layer of oil in order to ensure even cooking.
  5. When the oil reaches approximately 350 degrees it is time to begin cooking the steaks. Begin by using your hands to dip the first cube steak into the flour mixture; press the flour deep into every exposed surface of the steak so that it is entirely coated with a thin layer of spices and flour. Make sure that the flour is not thick clumping on the steak in any way.
  6. Carefully place the battered cube steak directly into the hot oil and allow it to cook approximately five minutes on each side. The exterior of the steak will be brown and crispy when the steak has been fully cooked.

Note: consider making gravy out of the oil and spices that are left over after cooking the steaks. It will be delicious!
