Whether hosting a brunch or simply wanting to try out something different for dinner, these simple egg recipes are sure to please even the most picky eater in the family.

The quiche, frittata and strata are variations of the same basic thing – the savory egg custard or torte.

Though quiche is a popular French custard dish, its origins are actually German. In fact, the word “quiche” comes from the German word kuchen which means cake.

Frittata and strata – meaning “fried” and “layer”, respectively - are of Italian origin. Both of these dishes were primarily used as a way to serve and perk up yesterday’s leftovers.

Whether giving new life to yesterday's veggies or trying out new flavors, customizing and personalizing these easy quiche, frittata and strata recipes is a piece of cake.

California Style Quiche

Ingredients:

  • 5 eggs
  • 3/4 cups of milk
  • 4 ounces Havarti cheese, shredded
  • 1 package reduced-fat cream cheese, cubed
  • 1 cup California blend frozen vegetables, thawed and patted dry
  • 1 medium tomato, thinly sliced
  • Salt and pepper to taste

Directions:

  1. Preheat oven at 375 degrees.
  2. Whisk eggs and milk in medium bowl.
  3. Stir in shredded cheese, cubed cheese and veggies. Mix well.
  4. Pour egg mixture into a greased 9 inch pie plate.
  5. Top with sliced tomato.
  6. Bake for 30-35 minutes (test by inserting knife into the center; knife should come out clean).
  7. Let stand for 5-10 minutes before serving.

Chicken Fajita Frittata

Ingredients:

  • 1/2 lb boneless, skinless chicken breast, cut into strips
  • 1 small onion, cut into thin strips
  • 1 medium green bell pepper, cut into thin strips
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 8 eggs
  • 1 cup Colby-Monterrey Jack cheese, shredded

Directions:

  1. In a large ovenproof skillet, sauté chicken strips together with onion, green bell pepper, lime juice, salt, cumin and chili powder in olive oil. Cook until chicken juices run clear.
  2. Whisk eggs in a small bowl.
  3. Pour eggs over chicken mixture.
  4. Cover and cook over medium-low heat for 8 minutes, or until eggs are almost set.
  5. Uncover and broil for 2-3 minutes to finish setting eggs.
  6. Remove from broiler and sprinkle with cheese.
  7. Cover and let stand for about 1 minute allowing cheese to melt.
  8. Serve with salsa or sour cream on the side.

Philly-Style Beef and Pepper Strata

Ingredients:

  • 7 cups Italian bread, cubed
  • 1 package frozen pepper and onion stir-fry blend (16 oz)
  • 1 lb cooked roast beef, cut into thin strips
  • 2 cups Monterrey Jack cheese, shredded
  • 8 eggs
  • 2 1/4 cups of milk
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste

Directions:

  1. Grease a large, square baking dish (13 in. x 9in. x 2in.)
  2. Place one third of bread cubes in an even layer over the bottom of the baking dish.
  3. Layer one third of the vegetable blend, beef strips and cheese on top of the bread layer.
  4. Repeat layers twice more.
  5. In a large bowl, whisk together eggs, milk, mustard salt and pepper; pour mixture over the layered ingredients.
  6. Cover and refrigerate overnight or for at least 8 hours.
  7. Ensure to remove the strata mixture from the refrigerator about 30 minutes prior to baking.
  8. Bake covered at 325 degrees for 1 hour.
  9. Uncover and bake for an additional 15 minutes.
  10. Let stand for 10 minutes before serving.
