A Versitile Approach to Baking Bread with Hardly Any Mess

This no-mess approach to baking scrumptious bread is quick and easy, and can be added to or changed into any type of bread you desire.

Crunchy and sweet on the outside, moist and soft on the inside, this zucchini bread recipe is sure to have your family and friends begging for more. Ideal for breakfast, snacks or gifts, you can substitute the zucchini with banana’s, carrots, chocolate chips, canned pumpkin, blueberries . . . whatever your hearts desire! Prep time is swift, as is clean up, leaving only the time in which it takes to bake this bread the most impatient of all. The scent alone will attract an audience.

Ingredients:

  • 1 ½ cups flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 1/2 tablespoon cinnamon
  • 1 cup sugar
  • 1/2 tablespoon vanilla
  • 1 cup canola oil OR ½ cup canola oil and ½ cup applesauce
  • 2 eggs
  • 2 zucchini’s

Topping:

  • ½ cup flour
  • ½ cup brown sugar
  • ½ tablespoon butter
  • ½ tablespoon Cinnamon

Directions:

  1. Preheat oven to 325 degrees.
  2. Using one bowl, mix together all the dry ingredients: flour, baking soda, baking powder, salt, cinnamon and sugar. Combine the vanilla and oil and/or applesauce (applesauce makes it moister in the center and cuts down on the oil). Crack your eggs into your used measuring cup and beat with a fork. Add the eggs and mix well.
  3. Set your grater in the middle of the bowl and shred your 2 zucchini’s. Combine thoroughly. Grease a loaf pan and pour in the batter (it should be fairly thick).
  4. Using a small bowl, combine all the Topping ingredients using a fork to press in the butter to make it a crumbly consistency. Pour the dry mix over the batter in the loaf pan. Bake for 60-70 minutes. Set on a wire rack to cool completely.

Alternate Ideas:

If you wish to try the other ideas, substitute the zucchini with either: 2 banana’s, 2 cups of chocolate chips, 4 large carrots, 1-1/2 cups of blueberries, or 1 can of pumpkin. You can also mix these ingredients to make an even tastier treat. Add walnuts to your zucchini or carrots, mix the blueberries with the banana, or add raisins with your pumpkin. This recipe is just a step stool to a varying degree of possibilities for your taste buds!

Total dishes dirtied: large bowl, small bowl, measuring cup, tablespoon, grater, mixing fork and bread pan (if it isn’t the foil kind).

Total mess to clean up afterwards: None if you put the ingredients away after their use.

For gift giving, use the foil bread pans and wrap in plastic wrap and ribbon, or just plain foil if you don’t feel the urge to get fancy. This recipe is delicious on a cold morning with a little bit of butter, microwaved 10-15 seconds for warmth, and a big cup of milk or coffee to top it off.
