Just one easy recipe can make all 3 favourite banana recipes depending on what container is used to bake the mixture or whether it is iced.

Coffee shops charge so much for 1 piece of banana bread and then extra for toasting it. Why not make this easy recipe at home to share with friends and family. Children in particular are very fond bananas and anything they are baked in, especially banana bread, banana muffins and banana cake.

Overripe bananas in the fruit bowl or fridge will now always have a use rather than filling up the compost bin and think of the money saved instead of being wasted. This easy recipe can be adapted to make banana bread, banana muffins or banana cake simply by changing the container the mixture is baked in or the type of icing placed on top.

Ingredients to Make Banana Bread, Banana Muffins or Banana Cake

  • 2/3 cup butter or margarine
  • 3/4 cup sugar
  • 1 large banana
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon bicarbonate soda
  • 1/3 cup milk
  • 2 cups S.R. flour
  • 4 teaspoons cornflour
  • 1/4 teaspoon salt

Method

  1. Cream butter and sugar until pale
  2. Mash the banana and beat well with the butter and sugar
  3. Add a well beaten egg
  4. Mix the bicarbonate soda and the vanilla in the milk in a separate container
  5. Sift the flours together in a separate bowl
  6. Alternatively mix in the flour and milk mixtures with the main mixture until well blended

For Banana Bread

  1. Place the mixture into a 23cm x 11cm greased and lined loaf tin
  2. Bake in a preheated moderate oven for 30-40 minutes or until springy to touch and golden brown
  3. Cool in tin for 5 minutes before turning onto cooling rack
  4. Serve toasted, warm or cold with butter.

For Banana Muffins

  1. Place dessertspoonfuls of mixture into patty cake pans
  2. Bake in a preheated moderate oven for 13 minutes or until cooked
  3. When cool, ice with vanilla frosting

Vanilla Frosting

Mix together 1 teaspoon butter or margarine, 1 cup icing sugar, 1/2 teapsoon vanilla extract and add gradually enough milk to make a firm paste to spread on top of muffins.

For Banana Cake

  1. Place the mixture in a round 20cm greased and lined spring tin
  2. Bake in a preheated moderate oven for 45 minutes or until cooked
  3. Cool in tin for 5 minutes before turning onto cooling rack
  4. When cool, ice with lemon frosting, which is the same as vanilla frosting but replace the vanilla and milk with lemon juice.

Variations

Cooked pureed apple may be added to any of the mixtures to lighten the flavour, but be sure to reduce the milk a little so it is not too moist.

To make the recipe egg free, replace the egg with one tablespoon white vinegar.
