Simple Steps for a Tasty Meal

Looking for a delicious recipe? Follow these steps for a shrimp meal that is better than the average scampi.

Shrimp scampi is a tasty dish, but most recipes lack anything besides shrimp and sauce. This quick and easy recipe delivers bright colors and crisp textures to a plate by adding fresh and tasty vegetables into the mix.

Begin With Clean Shrimp and Fresh Veggies

Ingredients

  • 1 1/2 pound of deveined shrimp
  • 1 broccoli stalk
  • 1/2 red bell pepper
  • 1 cup mushrooms/chopped
  • 1 cup pea pods
  • 1/3 cup zucchini/chopped
  • 1 stick of butter (unsalted)
  • 3 lemons/quartered
  • pinch of salt
  • Tbsp pepper
  • 4 cloves of minced garlic
  • 2 Tbsp of fresh, chopped parsley
  • 1 lb of uncooked pasta
  • 1/4 cup of dry, white wine

To save time, start with a pound and a half of uncooked, deveined shrimp. Of course additional vegetables such as green onions can be either added or substituted to please picky palettes. During summer months, this is a great recipe to follow using fresh finds from nearby farmers’ markets.

Dinner Directions Made Simple

  1. Place a strainer in a clean sink. Peel each shrimp, removing the shell and tail, and place in the strainer. Rinse with cold water. Once dry place the shrimp in a 9” x 13” glass baking dish. Dust with salt and pepper, and set aside.
  2. Preheat the oven to 400 degrees.
  3. In a small sauce pot, melt a whole stick of butter.
  4. Cut two lemons into quarters and squeeze fresh lemon juice into the butter.
  5. Add four cloves of minced or chopped garlic, either fresh or out of a jar.
  6. Add in quarter cup of a dry white wine (optional). Try a Riesling or Pinot Grigio. Remember, if you wouldn’t drink the wine in a glass; never add it to a recipe.
  7. Bring all of the liquids to a slow boil, remove the pot from the stove and pour the butter sauce over the shrimp and vegetables.
  8. Place the baking pan into the preheated oven uncovered and bake for 12 to 17 minutes, or until the crustaceans are pink and the veggies are crisp. Check the dish after about 8 minutes and stir using a spatula so the ingredients cook evenly.

While the shrimp is in the oven, a large pot of water should be set on high in order to cook a full box of preferred pasta. Once cooked to the desired texture, strain the noodles. After drying, place the pasta back into the cooled pot and set it aside. Chop up two tablespoons of fresh parsley, and quarter another lemon to be placed on the plate when serving.

Dinner is Served

Remove the pan from the oven and carefully pour the shrimp and veggie mixture over the noodles. Mix to coat all the pasta evenly. Use tongs to distribute the scampi onto each plate. Place a lemon on each, and sprinkle a pinch of fresh parsley for decoration. Pair with a glass of the white wine that was added to the recipe to bring out added flavors. Enjoy
