Halibut is a lean and meaty fish that is the perfect choice to use in fish and chips. Using halibut for fish and chips yields solid and satisfying results that will make ordinary cod fish and chips obsolete. Halibut is the largest of all flat fish and its meat is pure white and hearty; it can be likened to chicken breast in both texture and appearance. Sarah’s Outrageously Meaty and Tender Halibut Fish and Chips Recipe:

Difficulty: Easy

Serves: Three adults

Ingredients:

  • 3 Halibut Fillets
  • 6 cups vegetable oil
  • 2 1/2 cups of beer
  • 3 cups white flour
  • 4 tablespoons salt
  • 4 tablespoons pepper
  • 3 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 2 tablespoons paprika
  • 2 tablespoons finely chopped rosemary needles
  • 1 teaspoon cumin

“Chips” ingredients:

  • 3 large russet potatoes
  • 3 cups of vegetable oil
  • Salt

Preparation:

  • In a deep frying pan, heat six cups of vegetable oil to 350 degrees F to be used to fry the halibut.
  • In another large frying pan, heat three cups of vegetable oil to 350 degrees F to be used to cook the fries.
  • Cut each fillet of halibut into equal slices about one inch thick.
  • Wash and cut the russet potatoes into fry sized slices; the thinner the fries are cut, the crispier the fries will be.

Execution:

  1. In a large mixing bowl, mix together: flour, salt, pepper, garlic powder, onion powder, paprika, rosemary needles and cumin. Make sure that all ingredients are evenly distributed and blended before adding three cups of beer to the mixture. After adding the beer, mix all ingredients for several minutes until the batter is smooth and completely blended.
  2. After mixing together all of the ingredients for the batter, check to make sure that the oil for your fries and fish are at 350 degrees F before moving on to step three.
  3. After thoroughly washing your hands, you may begin coating your halibut strips with batter and starting the frying process. To do this, dip a piece of halibut into the batter and make sure that it is completely coated. Allow the excess batter to drip off of the halibut before gently placing the meat into the oil to fry. Continue this process for each of the halibut pieces, making sure to flip the fish over and cook until both sides are golden brown in color. Once cooked, remove the fish from the oil and place onto several layers of paper towels to absorb excess oil.
  4. After half of the halibut pieces are cooked, you may begin frying the fries in the preheated oil. Simply place a layer of potatoes into the oil and cook until they’re golden brown. Once cooked, remove the fries from the oil sprinkle with salt and place onto paper towels to absorb excess grease.
