Bacon, Egg and Potato Salad

This potato salad recipe will be a guaranteed hit with your guests!

There are hundreds of different potato salad recipes that are delicious and chefs continue to create different flavors that are appetizing to the palate. There are potato salads that are light and crunchy, warm and inviting, some that healthy for your waistline and there are some that are down right fattening, but have the most unforgettable taste. Here is a potato salad that falls in the latter category. It is high in fat and high in calories. Though it may not be your first choice when you are trying to lose weight, it is a salad that can be served all year long and it will leave all of the guests asking for the recipe!

Ingredients

  • 12 large red potatoes
  • 8 pieces of bacon
  • 1 bunch of green onions
  • 8 eggs
  • 1 ¾ cup of mayonnaise
  • 7 TBS of white vinegar
  • ¼ cup of olive oil
  • Salt and pepper

Directions

  1. Preheat the oven to 375 degrees. Hard boil the eggs and let them cool. Meanwhile, slice the red potatoes into thin slices, leaving the skin on. Place them in a large pan and drizzle with olive oil. Salt and pepper the potatoes and put them in the oven for approximately 35 minutes. Watch closely and make sure they are soft and “brown” on the bottom of the pan before taking them out of the oven.
  2. Meanwhile, fry up the eight pieces of bacon, place them in some paper towels and let them cool. Dice the green onion. In a large bowl, place 6 tablespoons of white vinegar. Measure the mayonnaise and add it to the vinegar. Stir well.
  3. When the potatoes are done, sprinkle with one tablespoon of vinegar and then add them to the bowl. Carefully, take the shells off of the eggs and dice up the eggs and combine them with the potato mixture.
  4. Crumble the bacon into the bowl and add the green onions. Stir the potato salad well. Add salt and pepper to taste. Cool the salad in the refrigerator for at least two hours. Be sure to stir before serving!

What to Serve With Potato Salad

Potato salad was originally derived from Chile, but there are several different varieties across the world now. Potato salad was traditionally served in America during the summer time, but because of the various types that have been created, it is now being served all year long. This salad is so filling it can actually be considered a meal. If serving for numerous guests, however, you might want to consider grilling some chicken or steak, baking some chicken, and some corn on the cob. Enjoy!
