In the past, hosting a barbecue simply meant slaving over a hot grill - but with so many different barbecue options and foods now so readily available you can be so much more inventive! Take a look at our tasty and innovative barbecue ideas for some truly mouth watering results.

Beer Can Chicken

Not just a novelty – Beer Can Chicken is one of the best ways to guarantee delicious, juicy flesh and it’s so easy! This recipe is just as delicious when oven roasted.

Ingredients

  • 1 whole chicken, stuffed
  • can of beer, ¾ full
  • olive oil
  • 1 ½ teaspoons cumin seeds, crushed
  • 1 ½ teaspoons coriander seeds, crushed
  • 1 teaspoon black peppercorns, crushed
  • coarsely milled sea salt

Instructions

  1. Massage room temperature chicken with olive oil, and then rub with combined spices.
  2. Make an extra hole in top of beer can. Lower the chicken in an upright position over the beer can so it fills the cavity.
  3. Stretch out the legs to stop the chicken from falling over.
  4. Sprinkle with sea salt and place in pre-heated barbecue over a low flame. (180 degrees Celsius, 356 degrees Fahrenheit).
  5. Keep lid closed, checking once or twice only.
  6. Sit back and relax for approx. 90 minutes! (Large birds may need an extra 30 mins). Chicken is cooked when meat moves easily from the bone.

Coriander, Lime & Chilli Prawns

Turn up the BBQ style-meter with this Asian-styled favorite.

Ingredients

  • 1 kg uncooked prawns
  • 1 lime cut in halves
  • 1 tbl peanut oil
  • 3 cups chopped watercress

Chilli Dressing

  • 2 tbl peanut oil
  • 2 tbl lime juice
  • 1 clove garlic, crushed
  • 1 red chilli, chopped
  • 2 tbl chopped coriander

Instructions

  1. Mix the ingredients for the chilli dressing and set aside.
  2. Remove the legs and head from prawns, leaving rest of shell intact. Cut along the underside to butterfly the prawns.
  3. Grill lime halves until lightly browned. Set aside.
  4. Brush prawns with peanut oil then grill until brown.
  5. Place prawns on bed of chopped watercress and drizzle with the dressing. Serve with limes and fresh garden salad.

Barbecued Mango with Coconut Ice-cream

If you haven’t barbecued some fruit on your grill, you don’t know what you’ve been missing!

Ingredients

  • 4 mangoes
  • 1 cup coconut cream
  • ½ cup palm sugar
  • 3 tbl castor sugar

Instructions

  1. Combine coconut cream and palm sugar then melt in a pan over low heat. Remove. Chill for 30 mins.
  2. Remove seed from mangoes to form 2 halves, sprinkle the cut side with castor sugar.
  3. Place mango pieces cut side down on clean, hot grill.
  4. Grill until sugar caramelises and fruit is just warm.
  5. Remove and top with sweet coconut cream sauce.
