By using an easy gluten free bread recipe, it’s possible to create a gluten free stuffing for holiday side dishes, or at any time at all. This recipe uses almond flour and a lot of vegetables to give it texture and flavor that is sure to please everyone at the table.

Cooking With Almond Meal

Almond meal or almond flour makes a great substitute for wheat flour for low carb bread or gluten free bread recipes. It adds a sweet, nutty taste, with a dense, grainy texture perfect for crumbling into stuffing. Almond flour can be purchased at most supermarkets in the baking section, or in the natural foods section. Those wanting a fresher taste or bakers who prefer to make all ingredients from scratch can make almond flour at home very easily. Simply fill a food processor or coffee grinder about half way with whole, raw almonds and pulse the machine on and off until a finely ground meal has emerged. Sift out larger chunks before adding to recipes; the flour will have a coarser texture than wheat flour, so be sure to avoid over processing the almonds and turning them to almond butter.

Adding Flavor to Low Carb or Gluten Free Stuffing

It’s important to add a great deal of vegetables to the stuffing to help fill out the taste of the low carb or gluten free bread. This recipe calls for a large amount of celery, as well as onion, pepper and parsley. The vegetables will cook down, and soften, mixing well with the almond meal to give a rich flavor.

Gluten Free Bread Recipe

Makes One Loaf

Ingredients

  • 2-1/2 cups Almond Meal
  • 2 Whole Eggs and the White from One Additional Egg
  • 1 Tablespoon Baking Powder
  • ½ Cup Melted Butter
  • ½ Cup Water
  • ½ Teaspoon Salt

Directions

  1. Butter a large loaf pan and set aside
  2. Combine dry ingredients, and whisk together well
  3. Add wet ingredients and mix thoroughly
  4. Pour the batter into the loaf pan and bake at 350 for approximately 40 minutes or until the top is lightly browned and tooth pick inserted in the center comes out clean
  5. Allow to cool, and break into chunks to dry for about 24 hours before making stuffing

Gluten Free Stuffing Recipe

Will Fill the Cavity of a Large Turkey

Ingredients

  • 1 Loaf of Gluten Free Bread
  • 1 Large Sweet Onion, Diced
  • 2 Small bunches of Celery, Chopped
  • 1 Large Red Bell Pepper, Diced
  • 1 Bunch of Fresh Parsley, Chopped
  • 1 Cup of Chicken Broth
  • 1 Tablespoon of Salt
  • ½ Teaspoon White Pepper
  • 4 Teaspoons Poultry Seasoning
  • 1 Teaspoon Olive Oil
  • If Baking in a Casserole Dish, Rather than Inside the Turkey, add 2 Eggs

Directions

  1. Sauté the onion and pepper on the stove until onion is translucent
  2. Add the parsley and continue sautéing until wilted
  3. Add seasoning and spices to the vegetables
  4. Add vegetables to the dried, cubed bread, and begin adding broth and oil, if stuffing inside the turkey, allow the stuffing to stay on the dry side, as it will absorb juice from the turkey, if baking in a casserole dish, add additional broth as needed, as well as eggs to help bind the stuffing together
  5. Stuff inside the cavity of the turkey before baking, or bake in a casserole dish for 30 minutes at 350 degrees, or until browned on top
