Cabbage is a simple vegetable that is full of dietary fibre, vitamins A and C and an excellent source of calcium.
Grandma loved cabbage. Any kind cooked any way. Her favourite lunch with a huge pile of fried cabbage topped with a couple of slices of fried peameal bacon. When I was a kid you always depend on Grandma to have some form of cabbage with every meal but breakfast. Actually, there were some mornings where refried cabbage and bacon was on the menu. I am still a huge fan of cabbage. It has lots of dietary fibre and no matter what you do with it, it always tastes good. The following three recipes are amongst my favourite ones. They are very tasty and are a great side to serve with any meal. Grandma's Fried Cabbage
Sauté onions in butter with turmeric until onions are soft, around 8 minutes. Add the sliced cabbage and stir-fry till tender. Do not brown or burn. Toss in the grated carrots and stir until the carrots are hot. Put into a bowl and toss with the sour cream till coated. Makes 4 servings. Grandma's Hot or Cold Coleslaw
Grate the carrot, slice the cabbage and onion and stuff into a 1/2 gallon jar with a lid or put into a large contained with a water tight lid. In another bowl mix the vinegar, olive oil and sugar. Microwave and stir until the sugar is completely dissolved. Pour over the cabbage in the container. Add the garlic, salt and pepper. Put on the lid and shake well. Refrigerate for at least 2 full days before serving. Shake it often to keep it mixed. Serve cold as a side dish in the summer and heat for 2 minutes in the microwave and serve as a side dish in the winter. Keeps for 7 days or more in the refrigerator. Grandma's Cabbage and Apple Slaw
Chop cabbage, apples and onions and place in a large bowl. Toss with the lemon juice. Mix vinegar, oil, ginger and sugar and heat in microwave for 1 minute. Beat until the sugar is dissolved. Pour over the cabbage. Put on lid and shake well. Chill at least 2 hours before serving. It's better the next day.
