Chili is one of the best comfort foods. It can be served for any occassion and is great for feeding a lot of people. Whether sick, tired or far from home this meal will feel like a comforting kiss on the cheek or a favorite warm blanket. Hearty Quick Chili and Easy Corn Bread is a home cooked, inexpensive, uncomplicated and oh so easy to prepare meal. Both of these recipes are a breeze to make but taste like you worked over the stove all day.
Follow these two simple recipes and everyone who tries them will ask for them over and over! They will never know how easy they are to make.
Hearty Quick Chili
Ingredients
1 lb chili meat
1/2 diced onion
1 can chili beans
1 package chili seasoning mix
1 can diced tomatoes
1/2 cup salsa (mild or hot)
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/2 cup grated cheddar cheese
Directions
Brown chili meat (chili meat can also be replaced with ground turkey meat).
Add diced onions- stir until onions are tender (chopped green bell peppers can also be added).
Stir in chili beans, diced tomatoes and salsa (for a thicker chili add a can of tomato paste).
Add salt, pepper, garlic powder and chili mix.
Bring to a boil.
Stir in grated cheese.
Simmer for 15 minutes. Makes approx. 6 servings
Simple Corn Bread
Ingredients
1 cup all-purpose flour
1 cup yellow cornmeal
1/2 cup sugar
2 tsps baking powder
1/2 tsp salt
1 cup milk
1/3 cup vegetable oil
1 egg
Directions
Preheat oven to 400*. Grease 8-inch square baking pan.
Combine flour, cornmeal, sugar, baking powder and salt in large bowl; set aside.
Combine milk, oil and egg in small bowl until blended.
Stir milk mixture into flour mixture just until moistened (for even more flavor add 1/2 cup shredded cheddar cheese and 1/2 cup green onions).
Spread batter evenly into prepared pan.
Bake 20-25 minutes or until golden brown (test by sticking a toothpick in the center; if it comes out clean it is ready).
Cut into squares. Serve warm. Makes approx. 9 servings.
Tips
Add additional grated cheese and diced onions on top of each bowl of chili.
Other condiments that would be good to add after cooking are a dollop of sour cream, chopped chives and rice.
For a vegetarian chili replace meat with additional beans such as black beans or garbonzo beans and for more flavor add a can of vegetable broth. Also, add more vegetables such as carrots and zucchini.
If you like extra spice dice up jalapenos and use hot salsa instead of mild.
This chili recipe makes a great left-over meal. The longer it sits the better the flavors combine.
