An Economic and Tasty Way to Cook

To smoke meat at home is never easier. Moreover, this recipe will give you two dishes. What better way to eat well and save money at the same time?

Smoking meat gives it a distinct flavour which is quite unlike any other method of cooking. It is not an easy thing to do at home without a smoke house. In this recipe, the meat is previously cooked, but the last stage gives it a distinct touch.

Recipe For Smoked Chicken

Although this recipe calls for chicken, one can use any meat that one likes. In fact, after knowing how to do it, the first step can be changed according to the occasion.

  • 1 chicken
  • vegetables for making broth
  • salt
  • 1 cup brown sugar
  • 1 cup black tea leaves (preferably Chinese tea)
  • 1 cup white rice

Directions:

  1. Clean the chicken and then boil it in a big pot with water covering the whole chicken. Cook for roughly 45 minutes, and then take out the chicken, it should be almost cooked. Skim the stock, and then put it back to boil with vegetables of choice and salt to taste. This in itself can be the first dish. One can add some pasta or rice.
  2. Use a wok, but a wide heavy pan will do. The chicken needs to fit in the wok or pan, and be covered tightly by a lid. Cover the whole wok including the lid with foil. pour into the wok the brown sugar, tea leaves and rice. White rice is called for because it is the cheapest. Put a rack at the bottom of the wok, and put the chicken on top. Turn the fire on high without the lid on. When the content starts to smoke, put the lid on and leave it for 7 to 10 minutes. Then turn off the fire and leave it for a further 5 minutes. Then the chicken would be ready. The skin will have a honey colour and the meat will taste smoky and sweet.
  3. Discard the contents inside the wok.

Variations

As mentioned, instead of chicken, one can use quails or even pork chops. For the latter, instead of boiling it, one can fry it on a hot plate first, and then smoke it. Remember that the smoking cooks the meat further, so it is advisable to leave the meat almost fully but not completely cooked.

Reminder

Remember to turn on the exhaust fan and leave the windows open when the smoking begins! And wear a cap to avoid smelling smoky the whole day!
