Recipe For Honey BBQ Chicken Tacos

Serves two. Each taco is 175 calories.

  • 2 Medium Chicken Breasts
  • 1 Cup of Honey Mustard
  • ½ Cup of Honey BBQ Sauce
  • 1 Drizzle of Honey
  • 1 Tbs of Lemon Juice
  • 2 Tsp of Chili Powder
  • 1 Tsp of Black Pepper
  • ¼ Cup of Golden Raisins
  • ¼ Cup of Roasted Almonds (crushed)
  • 1 Cup of Long Grain Brown Rice
  • ½ Cup of Salsa
  • 1 Cup of Water
  • 6-10 Small Corn Tortillas
  • Fat Free Sour Cream (if desired)

How To Make Honey BBQ Chicken Tacos

  1. Preheat the oven to 350 degrees. Boil the water in a small or medium saucepan over high heat. Once boiling, add the salsa and rice. Reduce heat to low. Cover and stir occasionally.
  2. While rice is cooking, prepare the chicken by trimming the fat and chopping into small cubes. Set aside.
  3. In a large frying pan, combine the honey mustard, BBQ sauce, honey, lemon juice, chili powder, and pepper. Stir well. Add chicken and heat frying pan over medium-high heat, stirring moderately.
  4. Rice is done when all of the water has been absorbed, holes appear on the surface, and rice is thick and fluffy. Remove from heat.
  5. Chicken is done when the sauce is very reduced and bubbly. Remove from heat.
  6. Sprinkle raisins and almonds over the chicken while still in pan.
  7. Warm tortillas in preheated oven for 3-4 minutes at the most. Tortillas should be soft and pliable, never rubbery.

How To Serve Honey BBQ Chicken Tacos

Put the rice in one bowl, the sauce-covered chicken in another, each with its own serving spoon. Put the warm tortillas onto a small plate. Cover to maintain warmth. Spread two tablespoons of rice onto a tortilla. Add two tablespoons of chicken. Top with sour cream (highly recommended). Most importantly, enjoy!
