Mom’s Outrageously Delicious Chili Cheese Dip:

Difficulty: Easy

Serves: Four hungry adults

Ingredients:

  • One eight ounce package of cream cheese.
  • One can of chili with no beans.
  • Two cups of sharp cheddar cheese.
  • ½ cup white onion.
  • One teaspoon of garlic powder or fresh garlic.
  • Salt and pepper.
  • Optional:two tablespoons of finely chopped jalapeno peppers.

Preparation:

  • Grate two cups of sharp cheddar cheese and set aside.
  • Finely chop ½ a cup of white onion and set aside with the grated cheese.
  • If fresh garlic is preferable over garlic powder, mince the fresh garlic and set aside.
  • Optional: mince two tablespoons of fresh jalapeno peppers.

Execution:

  1. In a large saucepan over medium heat, combine cream cheese, cheddar cheese, garlic powder salt, pepper and optional jalapeno peppers.
  2. Cook ingredients over medium heat until they begin to melt together to become a pale orange mixture. Make sure to continuously stir the mixture during this step.
  3. After about five minutes, the mixture should be at least partially melted and combined. When the mixture is fairly melted, add the bean less chili to the mixture. Continue to heat and stir the mixture for another three minutes.
  4. As the ingredients become melted down and appear more liquid than solid, add the chopped white onions to the mixture.
  5. Continue to stir for another two minutes or until all of the cheese has melted and become blended with the other ingredients. The chili cheese dip should have a orange appearance and there should be no pockets of solid cheese; all of the ingredients will be melted and blended together when the chili cheese dip is done cooking.

Serve:

Serve the chili cheese dip with your favorite brand of corn chips, pretzels, or small pieces of toasted bread. Since this dip cools down fairly quickly, it is a good idea to serve one half of the dip at a time. If one serves the dip in halves, it is imperative that the half which is on standby is covered; reducing moisture loss and containing heat.
