Chili doesn't have to be the same old tried and true beef and tomato recipes. Good chili comes with many variations.
Creamy and white, or spicy and red, chili is a crowd pleaser. These recipes prove that all chilis are not alike.
White Chili with Chicken Breast
Ingredients:
- 1 pound boneless skinless chicken breast, cut into 1/2 inch cubes
- 1 medium onion, chopped
- 1 1/2 teaspoon garlic powder
- 1 Tablespoon vegetable oil
- 2 (15 ounce) cans of great northern beans, rinsed and drained
- 1 (14.5 ounce) can chicken broth
- 1 (4 ounce) can chopped green chilies
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 1 cup sour cream
- 1/2 cup condensed milk
Directions:
- In a large saucepan, saute chicken, onion, and garlic powder in oil until chicken is no longer pink.
- Add the beans, broth, chilies, and seasonings, and bring to a boil.
- Reduce heat and simmer, uncovered, for 30 minutes.
- Remove from heat and stir in sour cream and evaporated milk.
- Serve immediately.
A Little Bit of Everything Chili
Ingredients:
- 2 teaspoons vegetable oil
- 2 small onions, chopped
- 3 gloves garlic, minced
- 1 pound ground beef
- 3/4 pound beef sirloin, cubed
- 1 (14.5 ounce) can of diced tomatoes
- 1 can of dark beer
- 1 cup of strong coffee
- 2 (6 ounce) cans of tomato paste
- 1 can of beef broth
- 1/2 cup of brown sugar
- 1 (12 ounce) jar of chili sauce
- 1 Tablespoon cumin
- 1 Tablespoon cocoa
- 1 teaspoon oregano
- 1 teaspoon cayenne
- 1 teaspoon coriander
- 1 teaspoon salt
- 4 (15 ounce) cans of kidney beans (May be either red or white or both.)
- 6 chili peppers, chopped
- Chili powder, jalapeno and or habenera peppers to taste
Directions:
- Cook onions, garlic, hamburger and sirloin in oil until meat is browned.
- Add tomatoes, beer, coffee, tomato paste, beef broth and spices.
- Stir in kidney beans and peppers.
- Reduce heat and simmer for 1 1/2 hours
If possible, refrigerate over night. Rewarm soup and serve the following day.
Hot Dog Chili
Ingredients:
- 1 pound of ground chuck
- 1 medium onion, chopped
- 1 small can of tomato paste
- 2 cans of water
- 1/2 cup of ketchup
- 1 Tablespoon of vinegar
- 1 1/2 teaspoon chili powder
- 1/2 teaspoon of salt
Directions:
- Brown ground chuck and drain.
- Transfer beef to a crock pot and add remaining ingredients.
- Cook over low heat for several hours or overnight.
This recipe can be eaten as a thick chili or used to make chili dogs.
Easy Turkey Crock-Pot Chili
Ingredients:
- 1 pound of ground turkey
- 1 (15 ounce) can of chili hot beans
- 1 (15 ounce) can of black beans
- 1 (29 ounce) can of tomato sauce
- 1 (28 ounce can) of diced tomatoes
- 1 Tablespoon of chili powder
- 1/2 Tablespoon of crushed red peppers
- 1/2 to 1 teaspoon garlic salt to taste
Directions:
- In a large skillet, brown ground turkey.
- Place the turkey, beans, tomato sauce, and diced tomatoes in a crock-pot.
- Add the chili powder and crushed red peppers. Stir.
- Cook on low for 5-6 hours.
For spicier chili, add a dash or two of cayenne pepper.
Serve all chilis with favorite toppings, and corn chips or crackers.
Chili is a warm and hearty soup that can be modified to suit many tastes. It can have few ingredients or many, and best of all, it's one of those foods that always seem to taste even better the following day.
