Cranberry sauce doesn’t have to be served with turkey on thanksgiving. It can enhance meals all through the year. Now that you know how to make home made cranberry sauce, let’s look at some main dish recipes.
Cranberry Chicken
This is a sweet main dish that pops with flavor. If you aren’t used to salt use a light soy sauce.
6 boneless, skinless chicken breast halves
¼ cup soy sauce
3 – ½ Tablespoons packed brown sugar
½ teaspoon ground ginger
1 cup whole cranberry sauce
1 orange – peeled, seeded, and chopped
Cooked rice
Preheat oven to 350 degrees.
Place chicken breasts in a glass (must be non-reactive) shallow baking dish that has been sprayed with a non stick spray.
In a bowl combine soy sauce, brown sugar, ginger, cranberry sauce and orange.
Pour over chicken and bake for 30 minutes.
Serve along side cooked rice drizzled with sauce. Makes 6 servings
Cranberry Chops
This main dish is sweet as well, what do you expect with cranberry sauce. It is simply delectable and your family will ask for it over and over again.
4 shoulder cut pork chops
½ teaspoon garlic powder
1 can or 2 cups of jellied cranberry sauce
3 tablespoons water
2 tablespoons brown sugar
¼ teaspoon ground nutmeg
1 teaspoon ground ginger
1 teaspoon cornstarch
2 cups carrots, cut in strips or in coins
Preheat oven to 375 degrees.
Sprinkle chops on both sides with garlic powder and place in a baking pan that has been sprayed with non-stick spray.
In a saucepan combine cranberry sauce, 2 tablespoons of the water, brown sugar, nutmeg, and ginger. Cook until sauce is melted. Sauce should need to be thickened.
In a cup combine 1 tablespoon water and 1 teaspoon cornstarch and mix well.
In a saucepan boil carrots in enough water to cover until just tender (about 8 minutes boiling).
Drain carrots and place in the bottom of baking pan.
Arrange chops over carrots and spoon sauce evenly over chops. Bake 45 minutes.
Remove chops to serving plate and with a slotted spoon remove carrots and place in a serving dish.
Pour remaining sauce into a sauce pan and thicken by combining remaining 1 tablespoon water with cornstarch and pouring into sauce.
Heat until sauce is clear and thickened. Pour over chops and serve. Makes 4 servings.
Cranberry Glaze for Ham
This is probably the best glaze ever for ham. It is sweet and spicy and really sticky so make sure you serve with plenty of napkins.
1 can or 2 cups whole cranberry sauce
1 cup brown sugar, packed
½ cup orange juice
½ teaspoon ground cloves
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Place all ingredients in a sauce pan and heat slowly until smooth.
Glaze ham during last 15 minutes of cooking period.
Place left over glaze in a gravy boat to be served hot with ham.
