Sweet Potatoes are just that - sweet and they make great desserts.
Sweet Potatoes are truly a wonderful thing. You can make main dishes and side dishes for your dinner table and you can make desserts fit for a king. Many things you can’t imagine can be made from this versatile vegetable.
The following are desserts were one of the main ingredients are sweet potatoes. Sweet potatoes are abundant around October and November but they can be found almost all year round. Once you taste some of these desserts you will want to have them more than one time a year.
The following recipe is like a glazed apple pudding. It is very sweet and delicious
Baked Apples and Sweet Potatoes
8 large sweet potatoes, boiled, drained, peeled and cut into ¼ inch thick rounds
4 large apples, peeled, quarter, cored and cut in ¼ inch slices (tart apple)
¾ cup brown sugar, packed
½ cup unsalted butter
1 Tablespoon grated orange peel
¾ cup orange juice
¼ cup maple flavored pancake syrup
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ground cloves
Preheat oven to 400 degrees.
Coat a 13 x 9 x 2 inch baking dish with non stick spray.
Place a layer of sweet potatoes at the bottom, slightly overlapping edges. Next put a layer of apples in the same manner.
In a small saucepan stir sugar and butter until melted. Add orange peel, juice, syrup, cinnamon, nutmeg and cloves and bring to a boil. Stir until smooth. Pour evenly over potatoes and apples.
Bake 40 minutes until potatoes and apples are tender and glazed.
Serve hot with or without whipped cream.
This cake is a lot like carrot cake using sweet potatoes. It has 3 layers and should be frosted with cream cheese frosting (recipe follows) It is spicy and sweet and you may like it more than carrot cake.
Sweet Potato Cake
1 – ½ cup cooking oil (vegetable or Canola oil)
4 eggs, separated
4 Tablespoons hot water
2 – ½ cups cake flour, sifted
3 teaspoons baking powder
¼ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
2 cups grated raw sweet potatoes
1 cup chopped pecans
1 teaspoon vanilla
Preheat oven to 350 degrees. In a mixing bowl cream oil and sugar.
Beat until smooth.
Add egg yolks and beat well. Add hot water.
In another bowl combine flour, baking powder, salt, and spices.
Gradually add to the creamed mixture.
On medium speed with mixer combine potatoes, nuts and vanilla until well combined.
In another bowl beat egg whites until stiff and hand fold into the mixture.
Pour into 3 – 8” round pans and bake for 25 to 30 minutes or until done.
Frost between layers and on top with Cream Cheese Frosting.
Cream Cheese Frosting
2 – 8 ounce packages cream cheese, softened
½ cup butter, softened (use only butter)
1 – ½ teaspoon vanilla extract
2 cups confectioners’ sugar, sifted
In a mixing bowl cream the cream cheese and butter.
Mix in the vanilla.
Gradually mix in the confectioners’ sugar.
You will have to refrigerate the cake to keep the frosting fresh.
Everyone knows about Sweet Potato Pie, but this pie is a little different due to the almond topping. You will never want regular sweet potato pie again after trying this one.
Sweet Potato Pie with Almond Topping
1 unbaked pie crust
FILLING
2 – ½ cups mashed sweet potatoes (use fresh by boiling then removing skins and mashing flesh or use canned sweet potatoes and just mash)
1 – 2/3 cups evaporated milk
1 cup brown sugar
½ cup butter, softened
2 eggs beaten
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
¼ teaspoon ground cloves
½ teaspoon ground ginger
1 teaspoon vanilla
½ teaspoon salt
TOPPING
½ cup flour
½ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cloves
¼ pound butter, softened
1 cup sliced almonds
Preheat oven to 400 degrees.
Make filling first by combining in a mixing bowl sweet potatoes, evaporated milk, brown sugar, butter, eggs, spices, vanilla and salt.
Pour into crust.
Prepare topping in a small bowl by combining four, brown sugar and spices.
Using a pastry cutter or knives cut the butter into the flour mixture until course crumbs start to form.
Stir in nuts.
Sprinkle topping over filling and bake for 30 minutes.
Cover edge of crust with foil and bake 10 to 15 more minutes or until set.
What a delightful end to dinner. Use these recipes for Thanksgiving or Christmas but don’t forget about them the rest of the year. They are just too good!
