2/3 cups sugar
½ tsp salt
2 and a half tbsp corn starch
1 tbsp flour
2 cups milk
1 cup heavy cream
3 egg yolks
1 tbsp butter

Combine sugar, salt, cornstarch and flour together in sauce pan.
Gradually stir in milk and cream
Cook over moderate high heat, stirring constantly until mixture thickens and boils.
Boil one minute.
Remove from heat.
Stir a little of the hot mixture into 3 slightly beaten egg yolks to temper them.
Blend eggs into hot mixture a little at a time.
Boil one minute more, stirring constantly. Remove from heat.
Blend in butter and vanilla.
Cool, stirring occasionally.
When cool, pour into cooled, baked pie shell. Cover and refrigerate for two hours. If the cook is planning to top the pie with meringue, she will not cool the pie. For best results, meringue should be spread on hot pie filling.
