How to make a good filling winter meal with Vegetable Sausage Soup.

In the winter time there are many one pot meals, crockpot meals, casseroles, soups, and stews that are fan favorites. Many use these traditional starter meals as main entrees during the cold and bitter seasons. This soup is a hearty choice and a very filling one for anyone. It is fun to play around with the ingredients and mix and match as personal preferences allow. The soup takes a pound of sausage so it’s quite filling and makes a nice stew-like meal. One could add beef broth and more veggies to make it go even farther and feed more for the same amount of meat. Take chances and use this as a basis for an imagination to take the recipe further and farther.

Vegetable Sausage Soup:

Ingredients

  • 1 pound Sweet Italian Sausage cut it into ½ inch pieces
  • 1 Tablespoon vegetable oil
  • 2 (8 ounce) cans or 1 (16 ounce) can stewed tomatoes
  • 2 (8 ounce) cans or 1 (16 ounce) can tomato sauce
  • 1 cup water
  • 2 teaspoons sugar
  • 2 teaspoons beef bouillon granules
  • 1 cup sliced carrots
  • 1 cup sliced zucchini
  • 1 cup sliced celery
  • 1 cup quartered and sliced onion
  • ¼ cup minced parsley
  • ½ teaspoon dried Italian herb seasoning
  • Grated Parmesan Cheese

Directions

  1. Gather all ingredients and prep areas.
  2. Get a large pot skillet or saucepan and cook the sausage in oil until good and brown. Remove the sausage from the heat and set aside, draining off the fat from it.
  3. In a different skillet or saucepan put the tomatoes, tomato sauce, water, bouillon, and sugar in. Boil the items on a medium heat and after boiling for two minutes, add carrots, celery, onion, celery, parsley, zucchini, and the herb seasoning. Return to a boil, and reduce the heat to low.
  4. Simmer for ten minutes.
  5. Add the sausage in to the mix and simmer for an additional ten or fifteen minutes, stirring often.
  6. Take soup from the pot or deep skillet and serve in bowls or mugs with the grated parmesan cheese on top.

This soup is especially good with a fresh loaf of baked bread, either in a rich hearty grain or baked in cheese bread like Asiago cheese. It is versatile and can be mixed up and have different ingredients mixed and matched based on personal preferences and food choices. It is good to make up in advance and can be frozen into individual servings for easy dinners or quick meals. This is also a huge hit for potluck dinners or when you need to bring a dish to a get together.
