Looking for creative ways to use up that holiday turkey? Here are some ideas and a delicious and easy new recipe!

Holiday turkey is one meal that is a welcome leftover. Everyone loves a good turkey sandwich, right? Yes, but how many turkey sandwiches can someone eat until they get old? There are lots of other ways to use up that holiday turkey meat, and in this tight economy perfectly good turkey should not go to waste!

Ideas for Using Leftover Holiday Turkey

Once the turkey sandwich phase has waned with the family, chop the leftover turkey meat into bite-sized chunks. Typical recipes call for one or two cups, so store the turkey in baggies in those quantities and if there is a lot of it, freeze some of the baggies. Turkey will stay good in the freezer for up to three months, stored in zipped freezer bags

When bagging the turkey, if there are any leftover vegetables, chop them into bite sized pieces if needed, and add to the bag for a future soup or stew. Leftover gravy can be added to the bag as well!

From the leftover turkey, you can make:

  • A favorite chicken recipe substituting turkey for the chicken
  • Turkey salad, using leftover cranberry relish (or Craisins), cashews and mayo or Miracle Whip
  • Crock pot turkey enchiladas, instead of chicken
  • Turkey Chop Suey (Add meat after vegetables have cooked to crisp tender)
  • Turkey fried rice
  • Turkey pot pie (use pre-made frozen pastry shells and fill with turkey, leftover veggies, gravy and potatoes)
  • Turkey and spinach quiche
  • A chef salad with turkey strips

Turkey Noodle Casserole

Makes 10 one cup servings

Recipe Ingredients:

  • 8 ounces wide egg noodles
  • 1/2 cup yellow onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 can Campbells Cheddar Cheese Soup
  • 1 can Campbells 98% Fat Free Cream of Chicken Soup
  • 2/3 cups lowfat milk
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups turkey (or chicken)
  • 1 cup corn chips, crushed

Recipe Directions:

Preheat oven to 350 degrees

  1. Boil noodles as directed, don't overcook!
  2. Spray pan with Olive Oil Spray and saute onions and green peppers until soft
  3. Stir in soups, milk, salt and pepper.
  4. Heat until bubbly, stirring often to make sure the bottom does not burn
  5. Add cooked turkey and cooked noodles, and stir gently to mix together.
  6. Pour into casserole dish and top with crushed corn chips

Bake for 30 minutes or until bubbly.
