Homemade waffles are always a treat for the whole family, and this gluten-free recipe will make it possible for everybody to enjoy crisp, honeycombed pancakes
Call it an English wafer, a Dutch wafel, aFrench gaufre, or an American waffle, but regardless of the name, the basic baked oatcake has been around for centuries. This recipe for Kasha Waffles calls for buckwheat groats and is gluten-free. Fresh fruits, syrups or soups can be substituted for the Ham and Cheddar Sauce.
Basic Recipe for Kasha Waffles
Ingredients:
1 cup fine kasha
10 slices of bacon, cut into small pieces
1½ cups of flour
2½ teaspoons double acting baking powder
1 teaspoon baking soda
1 teaspoon salt
1/8 teaspoon pepper
2 egg yolks
2 1/3 cups buttermilk
2 tablespoons poppy seed
2 egg whites
¼ cup butter, softened
Directions:
Boil six cups of salted water and add the kasha
Cook kasha for four minutes, drain it and let it cool
Sauté the bacon in a skillet until crisp, place on paper towels and reserve the fat
Sift the flour, baking powder, baking soda, salt and pepper together
In another bowl, beat the egg yolks and gradually add 1/3 cup bacon fat
Add the buttermilk to the egg mixture
Add the kasha, bacon bits, and poppy seeds
Add the flour mixture and stir until just combined
In another bowl, beat two egg whites until they hold stiff peaks
Fold the egg whites into the batter just until the mixture looks pebbly
Bring a waffle iron to moderately high heat and brush with softened butter
Cook each waffle for two or three minutes on each side, or until it is crisp and golden
As each waffle comes off the waffle iron, place it into a preheated very slow oven (200F) to keep it warm. Makes about eight waffles.
Ham and Cheddar Sauce (contains flour)
Ingredients:
3 tablespoons butter
2½ tablespoons flour
2 cups scalded milk
½ teaspoon dry mustard
1/8 teaspoon Tabasco ®
Pinch of nutmeg
1½ cups chopped cooked ham
2 tablespoons butter
1 ½ cups grated sharp Cheddar cheese
Directions:
Melt the butter and add flour, stirring over low heat for three minutes
Whisk the scalded milk and spices into the roux,
Simmer the sauce, stirring, for three or four minutes or until it is thick and smooth
In a skillet, sauté the cooked ham in two tablespoons of butter
Add the ham and the cheese to the sauce, stirring until the cheese is melted.
This basic recipe can be adapted in many ways and served with a variety of toppings. In addition to the ham and Cheddar sauce above, fresh fruit, berries, maple syrup, molasses, creamed mushrooms, and creamed chicken are just a few ideas to consider. Waffles can be served for breakfast, lunch or dinner and are especially popular with children.
