Lasagna with a Spanish Twist

If looking for a new recipe to add to the collection, this easy Mexican lasagna dish takes little prep time and packs a lot of flavor using minimal ingredients.

The great thing about this dish is that it is completely customizable, from the meat to the garnishes, the possibilities are limitless.

Easy Mexican Lasagna Ingredients

  • 1 lb of lean ground turkey
  • 1 packet taco seasoning
  • 1 14 oz can fat-free vegetarian refried beans
  • 1 8 oz bag of shredded Mexican blend cheese
  • 1 package flour tortillas, size will depend on your baking dish
  • broken tortilla chips

Garnishes

  • chopped onion
  • sour cream, or plain non-fat yogurt
  • freshly chopped cilantro
  • salsa
  • store bought guacamole
  • sliced black olives
  • diced tomatoes

Directions:

  1. Preheat the oven to 375. While the oven is preheating, brown the ground turkey in a medium skillet and add the taco seasoning following the directions on the packet.
  2. Spray the baking dish with cooking spray if desired. A regular glass lasagna baking dish is perfect, but smaller casserole dishes work just fine. Spread a small scoop of the prepared taco meat into the bottom of the baking dish and cover with one or more tortillas depending on the size. Just make sure to cover most of the meat. Spread a layer of refried beans on top of the tortilla and sprinkle with a handful of shredded cheese. Cover with a tortilla and another scoop of taco meat. Continue to repeat the layers until reaching the top of the baking pan, leaving enough room for a final layer of cheese.
  3. Cover the pan with foil and bake for 25-30 minutes, or until the edges are bubbly. Remove the foil and sprinkle a layer of the broken tortilla chips on top of the cheese and continue to bake for an additional 5-10 minutes, watching carefully to prevent the chips from getting too dark.
  4. Remove from the oven and let sit for 5 minutes. Cut into squares and serve with garnishes of choice.

This dish can take on many different forms so don't be afraid to mix things up a bit. Try refried black beans and pepperjack cheese, or replace the ground turkey with shredded chicken and the taco seasoning with fajita seasoning. In the mood for seafood? Use precooked shrimp and imitation crab, a jar of con queso cheese sauce and monterey jack cheese for a rich and creamy lasagna. The idea is to take a simple recipe like this and experiment with different flavors and fillers. Happy cooks are sure to find a combination everyone in the family will love.
