A rice cooker can not only cook the perfect bowl of steamed white rice, but it can also cook up a multitude of other rice-based dishes with minimal effort.
Here are a couple more recipes for easy one-pot meals you can make in your rice cooker. Keep in mind that more delicate ingredients, such as seafood, do not need to be cooked as long, and should be added near the end of the cooking cycle.
Rice Cooker Paella
Don't let this long list of ingredients discourage you from making this meal. The rice cooker makes it so easy.
2 chicken breasts, cubed
2 cups short-grain rice
1 onion, chopped
2 sausages, cut into bite size pieces
1/3 cup olives
2 small-medium tomatoes, peeled and chopped
¼ cup green peas
1 tsp Spanish paprika
1 tsp dried oregano
1 tsp ground black pepper
a few threads of saffron
6-7 uncooked shrimp, peeled
1 ¼ cup chicken stock
1 cup dry white wine
olive oil
(optional) 6-7 scrubbed mussels
Directions:
Turn rice cooker on to the cook setting. In the open rice cooker, add 2 tablespoons of olive oil, and saute the onion for 1 minute.
Add the chicken and sausage, and stir around to brown slightly, about 1-2 minutes.
Add the rice, and stir it into the oil. Allow the rice to toast for a minute or two.
Add the tomatoes, peas, olives, white wine, chicken stock, and seasonings (paprika, oregano, pepper and saffron), stirring to combine.
Close the lid of the rice cooker, and cook for about 15 minutes, stirring occasionally, until rice is al dente.
Add the shrimp (and if desired, mussels). Cook an additional 5-10 minutes, until shrimp is cooked (and mussels open, if using).
Stir rice, check for seasonings, and add additional salt if required. Serve with lemon wedges.
Rice Cooker Chicken Congee
This Chinese rice porridge is a popular breakfast food, and is simple to make with a rice cooker. Feel free to add any additional flavorings you like, such as some of these essential ingredients for Chinese cooking.
½ cup rice
4 cups water
1 cup shredded cooked chicken (a great way to use up leftover rotisserie chicken)
1 tsp chopped ginger root
salt
chopped green onions
Directions:
Put the rice, water, ginger and chicken in the rice cooker. Turn it on to the cook setting. The congee needs to cook for about 1 ½ hours, so you will need to press the “cook” button 2 or 3 times to turn the rice cooker back on when it turns off automatically. Stir occasionally. If you have trouble getting the cook button to stay on (it usually pops up automatically), let the congee cool for a few minutes with the lid open before closing the lid and cooking again.
After about 1 ½ hours of simmering, the rice should have broken down and the congee should be thick.
Add salt to taste, and serve with chopped green onions sprinkled on top. Many people like to mix a raw egg into their hot congee, and season the congee with a little soy sauce. Enjoy!
