Potatoes can be cooked in a variety of ways, but oven roasted pairs best with any dish. Not to mention the great aroma in brings to the kitchen. This is also one of the healthiest ways to cook them. The secret to making great tasting potatoes is what goes into them before they are roasted in the oven.

Perfect Oven Roasted Potatoes

Ingredients:

  • 6-8 medium to large sized potatoes-can use any variety of potato (cut into bite-sized pieces or wedges)
  • 1 cup of extra virgin olive oil (if you don't have olive oil, you can use any other cooking oil)
  • 1 tablespoon of dried oregano
  • 1 tablespoon of paprika
  • ½ tablespoon of nutmeg
  • Salt and pepper (for taste)

Directions:

  1. In a large bowl, combine cut potatoes, olive oil, and all remaining ingredients.
  2. Stir well until potatoes are well and evenly coated
  3. Preheat oven to 350 degrees
  4. In a large casserole dish, lightly grease bottom of the dish to prevent potatoes from sticking. Put potatoes into casserole, and place into the oven.
  5. Bake at 350 degrees for 30-40 minutes, or until potatoes are cooked. Do not cover the casserole dish with tin foil. Potatoes will cook better if dish is left uncovered. Potatoes should have a golden color to them when they are cooked. An easy way to check if potatoes are cooked thoroughly is to stick a fork into a potato. If fork goes in smoothly, potatoes are cooked. If you prefer potatoes with more of a crisp texture to it, allow to stay in oven for a few more minutes.

Additional Options:

If you want to bump up the flavor in the potatoes, or simply want to change the taste from time to time, try adding any of the following ingredients to the existing recipe: Cayenne pepper for an extra spicy kick, minced garlic for extra flavor, or the juice of one lemon for a zesty alternative. Any three of these ingredients can be added along with the existing ingredients, changing the overall flavor of the potatoes. Try these alternatives each time you make oven roasted potatoes, so you have a variety each time.
