Homemade pita pizzas are delicious and easy to make. Try this barbecued chicken recipe, a favorite with all the family, to produce a scrumptious meal.

Pita bread, also spelt pitta, is a popular round leavened flatbread consumed by many cultures around the world. It’s mainly made with wheat but can also be made in multigrain and whole wheat varieties. It is a convenient, easy and economical base to use for pizzas. Supermarkets, bakers and most grocery stores sell a good variety of pita bread. They usually come in multi- packs and can be purchased small sized or large sized. Any unused pita can safely be frozen.

The Greeks were the first people to come up with the idea for pizza. They baked round flat bread and topped it with favorite foods such as herbs, spices and varieties of meats and fruits. There are numerous toppings that can be used; it’s just a question of using your imagination. Try this recipe using barbecued chicken, and get the children to help assemble it, it’s a lot of fun.

Preparing your pizza

Before adding your topping, grill one side of the pita bread until golden and crispy. Place on a pizza stone or baking sheet, cooked side down. Use a commercially bought pizza sauce if time doesn’t allow making one. Try a ready cooked barbecued chicken as they are full of flavor and cut down on the preparation time. If cooking your own chicken pour over barbecue sauce whilst roasting, or drizzle sauce over the chicken when making up the pizza.

Barbecued Chicken Pizza

Ingredients

  • Pizza sauce
  • 1 onion, peeled and thinly sliced
  • 1 red pepper, seeded and thinly sliced
  • 1 barbecued chicken
  • Grated cheese of your choice
  • Finely chopped fresh basil
  • 1 large tomato, thinly sliced

Directions

  1. Generously spread pizza sauce over the base of the pita bread.
  2. Combine enough onion and red pepper together to cover over the sauce.
  3. Add a generous amount of the sliced barbecued chicken and cover with the grated cheese.
  4. Sprinkle over the chopped basil and top with tomato slices.
  5. Cook in a hot oven until cheese melts and tomatoes have turned golden.

This recipe will make two large or four small pizzas.

Children especially love the smaller ones as they can be sliced into four easily to manage portions. They also have the delight of having their own pizza all to themselves.

Variations for Toppings

These can all be assembled in the same manner as above using the pizza sauce as your base

  • Slices of cooked potato, garlic, chopped fresh thyme and seasoning
  • Oregano, red onion, mozzarella cheese, sliced spicy sausage, drizzle of olive oil
  • Can of drained chunked tuna, roasted red pepper, roasted garlic, feta cheese
