Warm your family and friends during the winter with a bowl of hot chili.
Nothing warms the body more than a hot bowl of chili. The traditional style chili consists of ground beef, kidney beans, and tomatoes but there is room for other styles. In this article there is a traditional chili with options to add other vegetables to make it a little more nontraditional. There is a white chili that contains chicken, Great Northern beans, green chilies and has a definite Latin flavor. Pork and Sausage chili has green chilies, tomatoes, and black beans in it and done in a crockpot.
Plain Old Chili
This makes a great winter dinner with crackers and a big loaf of crusty bread.
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, chopped
1 to 1-1/2 pounds ground beef
2 – 28 ounce cans of crushed tomatoes
2 – 15 ounce cans of red kidney beans, undrained
1 tablespoon chili powder
1 cup mushrooms, sliced
1 can beer
1 – ½ cup zucchini, sliced (optional)
Shredded Cheddar Cheese (optional)
Directions:
In a Dutch oven heat the olive oil.
Add onion and garlic and sauté until onions are transparent.
Add Ground Beef and completely brown.
Add crushed tomatoes and kidney beans and simmer for about 15 minutes.
Add chili powder, mushrooms, and beer (watch out it will foam up), stir until foam subsides, and cook for about 45 more minutes. Add water if it seems too thick or it cooks down to low.
Options: For a nontraditional chili add zucchini to the onions and garlic and continue with recipe. You can serve either traditional or nontraditional chili with Cheddar Cheese sprinkled on individual servings.
White Chili
This has a Latin American flavor that can’t be beat. It is truly warming in spicy heat.
Ingredients:
1 tablespoon vegetable oil
1 pound boneless, skinless chicken breast halves, chopped in bite sized pieces
1 cup onion, chopped
2 cloves garlic, chopped
2 – 15 ounce cans great Northern white beans, drained
1 – 7 ounce can diced green chilies
1 – 14 ounce can chicken broth
1 tablespoon jalapenos, diced
½ teaspoon oregano
1 teaspoon cumin
1 cup Shredded Monterey Jack cheese
½ cup Sour Cream
Directions:
In a Dutch oven heat oil.
Add chicken and cook for about 5 to 6 minutes or until it is well browned and cooked through.
Add onion and garlic and cook until onion becomes translucent (about 3 minutes).
Add drained beans, chilies, chicken broth, jalapenos, oregano and cumin.
Bring mixture to a boil. Reduce and simmer for 20 minutes stirring occasionally.
Stir in cheese and sour cream and cook just until cheese melts.
Serve hot.
Pork and Sausage Chili
Try this at your next Foot Ball party. It is truly hearty and delicious and done in a crock pot.
Ingredients:
2 tablespoons vegetable oil
1 pound boneless country style pork ribs, cut into ¾ inch cubes
½ pound cooked smoked sausage or Kielbasa, cut into ½ inch slices
1 cup onion, chopped
2 cloves garlic, crushed
1 cup celery, chopped
1 – 15 ounce can black beans, rinsed and drained
1 – 15 ounce can tomato sauce
1 – 10 ounce can diced tomatoes
1 – 7 ounce can green chilies, diced
1 cup beer at room temp or water
2 teaspoons chili powder
Salt and pepper to taste
Directions:
In a Dutch oven heat oil. Brown pork on all sides and then add sausage and brown slightly.
Add onions, garlic and celery and sauté about 3 to 4 minutes.
Add this mixture to a crock pot then add beans, tomato sauce, diced tomatoes, chilies, beer, chili powder and salt and pepper to taste.
Cook on low for 8 hours and serve hot.
Chili is a great dish to serve in the cold of winter. Any of these recipes will put some heat in your belly.
