Potatoes are versatile and filling which makes then the perfect comfort food.

There are few vegetables quite as satisfying as potatoes. They can be cooked on their own or combined with other ingredients. To keep potatoes fresh for longer, remove from plastic packaging and store in a cool, dark well-ventilated place.

Curried Oven Chips (French Fries)

Baking the chips in the oven reduces the amount of fat needed to cook them. This is a health advantage.

Ingredients (for 2 to 3 people):

  • 3 large potatoes
  • 80g butter or margarine, melted
  • 5 to 10 ml curry powder
  • 5 ml coarse salt

Method:

  1. Preheat oven to 190 degrees C.
  2. Wash potatoes and cut into chips without peeling. Rinse well in cold salted water, then pat very dry.
  3. Combine butter and curry powder, add chips and toss well to all sides of potatoes.
  4. Place on a hot baking sheet, arranging chips in a single layer. Put in the oven and bake for 20 minutes.
  5. Turn potatoes and bake for 20 minutes more. Turn again, bake 15 minutes or until potatoes are starting to brown. Watch that they do not burn.
  6. Turn one more time and bake about 10 minutes more until nicely browned.
  7. Remove from oven and sprinkle with coarse salt. Serve hot.

Perfect Chips

The perfect fried chip is crisp on the outside but soft inside. This can be achieved by frying the chips twice. They should not absorb a lot of oil during cooking.

Ingredients (3 to 4 servings):

  • 6 medium potatoes, preferably unpeeled
  • vegetable oil for deep frying
  • salt

Method:

  1. Clean potatoes and dry completely. Cut into chips.
  2. Soak in cold, salted water for 20 minutes, then drain well and pat dry.
  3. Heat oil to a moderate temperature (180 degrees C, if you have a deep-fat fryer) and fry chips, a few at a time, until tender. Remove and drain well.
  4. When all potatoes are fried, heat oil to a higher temperature (190 degrees C) and fry again in batches until crisp and golden.
  5. Drain well on kitchen paper, sprinkle with salt and keep warm before serving.
  6. For extra flavour, sprinkle with seasoned salt, a little lemon pepper and serve with sour cream.
  7. If you are wanting to prepare them, before hand, the chips can be half cooked, set aside and flash-fried before serving.

Baked Potatoes

Ingredients (2 servings):

  • 4 medium potatoes
  • coarse salt
  • sour cream
  • grated cheese
  • chives

Method:

  1. Scrub potatoes and prick skins with a skewer or fork. While potatoes are still just damp, sprinkle with coarse salt.
  2. Bake at 180 degrees C for about 1 hour.
  3. Remove from oven. Cut off the tops, gently scoop out the cooked potato and mash with plenty of cheese, chives, sour cream or your favourite topping.
  4. Refill potatoes and reheat a few minutes before serving, if necessary.
