Bisquick Bacon Quiche

Serves 2 to 4

Ingredients

  • Cooking spray
  • ½ to 1 cup washed baby spinach, chopped
  • ¼ cup onion, chopped
  • 1-3 teaspoons garlic, minced (to taste)
  • 3 bacon strips
  • 1 cup shredded cheese
  • 4 eggs
  • 1 ¾ cups milk
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • ½ cup Bisquick®

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a medium, nonstick frying pan with cooking spray. Sauté spinach, onion, and garlic over medium heat until softened.
  3. Meanwhile, cook three strips of bacon in the microwave according to package directions. Crumble or tear bacon into small pieces.
  4. Spray a standard pie dish with cooking spray. Sprinkle spinach mixture, bacon crumbles, and cheese evenly across bottom of pie dish. Set aside.
  5. In a large bowl, beat together eggs and milk until well blended.
  6. Add remaining ingredients (Bisquick, pepper, and salt) to egg mixture and beat until well blended (some small Bisquick lumps are fine).
  7. Pour Bisquick mixture evenly into pie dish, over the other ingredients.
  8. Bake the quiche at 350 degrees for 50 minutes, until top is golden-brown and a knife inserted in the center of the quiche comes out clean. Let the quiche stand for at least five minutes before cutting and serving.

The Low-Fat Quiche Recipe: Suggested Substitutions

Ingredients

  • Cooking spray
  • ½-1 cup washed baby spinach, chopped
  • ¼ cup onion, chopped
  • 1-3 teaspoons garlic, minced (to taste)
  • 3 low-fat turkey bacon strips
  • 1 cup shredded low-fat or fat-free cheese
  • 1 cup egg substitute
  • 1 ¾ cups skim milk
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • ½ cup Heart Smart Bisquick®

Directions

Same as for basic quiche recipe above. Using all of the ingredient substitutions for a low-fat quiche makes a great main dish for a healthy diet.

I think this recipe is good. I have made quiche before and it didn't really taste as good as the first one sounds. I like the idea of having the bacon at the bottom so that you get the flavor in the whole pan because i love to eat bacon for breakfast as much as possible. I like how you made it easy for people to make by using common ingredients.
