The greatest challenge when cooking chicken is maintaining moisture. One way to keep chicken moist is with a hearty marinade. Another is to keep your cooking process slow, over lower heat, to keep in the great moisture and flavor. A marinade of lime juice, soy sauce and honey keeps moisture and brings out a great flavor in grilled chicken.

Serves 4 with leftover chicken for meal 2
Ingredients
Season chicken with salt and pepper. Blend honey, soy sauce, lime juice and zest and garlic. Put chicken in baking dish or large Ziploc bag, and cover with three-fourths of the marinade. Marinade in refrigerator for 4 hours up to overnight. Add remaining marinade to vegetables in separate Ziploc bag and marinade for one half hour.
Thread half of the chicken and all of the vegetables, alternatively, onto skewers. Cook over medium heat on the grill for 12 minutes, turning often. Cook the remaining half of the chicken alone and reserve for Meal 2.
Serve Chicken Kabobs with rice pilaf and a side salad for a delicious, healthy meal.
Ingredients
Cook rice according to package directions. Heat oil in wok or frying pan on high. Add garlic, onion, carrots. Mushrooms and green peppers. Stir constantly for 5 minutes. Add chicken. Continue stirring until the chicken is warmed through. Add soy sauce during last minute of cooking, and stir to coat. Dish stir fry mixture over rice, and serve immediately.
