This recipe is quick, easy, and very tasty. These potato wedges would make a good side dish with a variety of main courses, such as steaks, casserole, or fish.

Cultivated in the Americas since ancient times, potatoes have been a staple food in the western world for the last couple hundred years or so. They are cheap, plentiful and can be prepared in a great variety of ways. If your family is on a budget, try this simple recipe for potato wedges. They are great as part of a hearty dinner or served on a plate as an afternoon snack.

Selecting the Ingredients

For this recipe, medium to large red potatoes are ideal. A bag of red potatoes can be found in just about any store with a respectable produce section. Be sure to wash them thoroughly before you begin cooking. If you want to cut them into smaller wedges, the cooking time may need to be reduced slightly.

Spice it Up

Besides the potatoes, most of the ingredients are common to the household spice rack. You will need garlic salt, lemon pepper and parsley flakes. You can substitute common table salt, black pepper, or basil flakes in a pinch.

Cheese and Olive Oil Deliver the Flavor

In addition, you will need Parmesan cheese and olive oil. The slightly moist variety of Parmesan cheese that needs to be refrigerated is best, but you can use dried Parmesan cheese as well. Extra virgin olive oil is generally recommended, but any kind will do.

Using Potato Wedges in a Meal

Potato wedges can be paired with just about anything. They make a great compliment to a steak or lamb entree. You could also pair them with a Tuna casserole. Add steamed vegetables, biscuits, scallops, or a salad, and you'll have a complete meal. Of course, there is nothing wrong with baking a nice batch of potato wedges and eating them throughout the day as a snack.

Ingredients:

  • 6 Large Red Potatoes
  • 4 Tbsp Olive Oil
  • 1 1/2 Tbsp Parmesan Cheese
  • 1 tsp Garlic Salt
  • 1 tsp Parsley Flakes
  • ½ tsp Lemon Pepper

Directions:

  1. Preheat oven to 400 degrees.
  2. Cut potatoes into quarters, then transfer them to a mixing bowl. Add olive oil, Parmesan cheese, garlic salt, lemon pepper, and parsley flakes. Stir the mixture until potatoes are well coated.
  3. Cover baking pan, approximately 12” x 18” in size, with tin foil (a non stick cooking spray may work also). Place potato wedges on the foil-covered pan. Spoon any leftover olive oil mixture onto the potatoes.
  4. Place pan in the oven and cook for 14 minutes.
  5. Remove pan from oven, carefully use tongs to turn over the potato wedges, and cook for another 14 minutes or until they are golden brown on the outside.
  6. Let cool for 5 minutes, then serve.
