Beef Broccoli Over Ramen Noodles, Darlene Cheek
Spice up the simple Ramen noodle with a few quick and easy variations that include chicken, beef, cauliflower, and broccoli ideas.

The Ramen noodle – fast, easy, and inexpensive! Unfortunately, the Ramen noodle has been a staple for starving artists, college students, bachelors, and tight family budgets, so when budgets expand and gourmet cooks blossom, many folks move on from the Ramen noodle and never look back. The Ramen, however, is still a very handy kitchen item. It is a very versatile side dish, and what menu item can you still buy for a dime, after all? So whether you haven’t had the humble Ramen in years or it always has been and still is your favorite food, give these alternatives a try!

Cauliflower Chicken Over Ramen Noodles

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into 1” chunks
  • 1 bag of frozen cauliflower
  • 1 small onion, diced
  • 1 package oriental flavored Ramen noodles.
  • 1 tablespoon of light flavored olive oil and 1 teaspoon
  • Soy sauce
  • ½ teaspoon of garlic powder
  • 1 heaping teaspoon of minced garlic
  • Salt and pepper
  • 1 teaspoon of Japanese hot mustard
  • A handful of chopped chives

Directions:

  1. Sautee diced chicken in one tablespoon of olive oil, with onion, soy sauce, garlic powder, minced garlic, and hot mustard.
  2. In another pot, boil cauliflower until tender, and then drain and chop it into chunks.
  3. Toss cauliflower in one teaspoon of olive oil, salt and pepper to taste, and chives. Pour cauliflower into the skillet with the chicken and toss to coat.
  4. Sprinkle chives over the top of the dish and add soy sauce to preference before serving.
  5. Serve over a bed of Ramen noodles that has been cooked, drained, and mixed with seasoning package.

Beef Broccoli Over Ramen Noodles

Ingredients:

  • 1/2 pound thinly sliced beef
  • 1 tablespoon of cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon of minced garlic
  • 4 tablespoons light flavored olive oil
  • 1/2 teaspoon of crushed red pepper flakes
  • 1 bag of frozen baby broccoli
  • 1 tablespoon of light flavored olive oil
  • ¼ to ½ cup water with 1 package roast beef Ramen noodle seasoning mixed in1 package roast beef Ramen noodles, boiled, drained, and mixed with seasoning

Directions:

  1. In a bowl, mix together soy sauce and cornstarch until the cornstarch is dissolved
  2. Whisk in oil.
  3. Stir in garlic and beef and stir to coat.
  4. Let this marinate in the refrigerator for a couple of hours.
  5. Let bag of broccoli sit out and thaw about halfway
  6. After the beef has marinated, stir fry the broccoli in one tablespoon of oil.
  7. Set the broccoli aside and stir fry the beef for seven or eight minutes. Then stir in the pepper flakes and toss to coat.
  8. Add the broccoli back in, along with the water and ramen seasoning mix.
  9. Start with Ramen seasoning dissolved in ¼ cup of water, and adjust the water amount to get the right saucy consistency.
  10. Serve the beef broccoli over a bed of roast beef flavored Ramen noodles that has been cooked, drained, and mixed with seasoning package.

This will be a favorite!

Rosemary Chicken Over Ramen Noodles

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon of black pepper
  • 1 tablespoon of minced garlic
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 package of roasted chicken Ramen noodle seasoning
  • ½ teaspoon of fresh rosemary, finely chopped
  • 1 package of mushroom flavor Ramen noodles, boiled, drained, and mixed with seasoning and a drizzle of extra virgin olive oil

Directions:

  1. Coat chicken breasts with pepper, garlic, and rosemary, and fry in olive oil until no longer pink in the middle and nicely browned on the outside.
  2. While this is cooking, prepare Ramen noodles.
  3. Remove chicken from the pan and slice chicken breasts into ¼” slices and serve over the Ramen noodles.
  4. A nice side for this is steamed broccoli tossed in a drizzle of olive oil and a little salt and pepper.
