Great Artichoke Recipes for Dips and Entrees

Learn two new recipes using artichokes. Impress party guests with a great artichoke dip, or serve an elegant artichoke stuffed chicken entree for dinner.

Using artichokes in recipes can enhance an appetizer table or provide an elegant main course entree. Artichokes are surprisingly versatile. Their mild flavor and buttery consistency are perfect for cheesy dips. Additionally, mingle artichokes with chicken and transform a bland entree into a main course that is truly special. Try these two recipes with artichokes: a dip for entertaining guests or bringing to a party, and a main dish that will please even picky eaters.

Hot and Cheesy Artichoke Dip

Ingredients for Artichoke Dip:

  • 1 - 15 1/2 oz can of artichoke hearts
  • 1 cup mayonnaise (no substitutions)
  • 1 cup grated parmesan cheese
  • 8 oz shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1 round bread bowl, sourdough or any preferred type

Method:

  1. Preheat oven 350 degrees F.
  2. Drain artichoke hearts and chop coarsely.
  3. Place artichokes into a stirring bowl. Add the mayonnaise, parmesan, mozzarella, and garlic powder.
  4. Stir ingredients until well blended.
  5. Slice a large hole on top about three-quarters of the way down into the bread bowl without coming through the bottom. Scoop out excess bread.
  6. Cut excess bread into large cubes and set aside for dipping.
  7. Place dip into bread bowl and place bread bowl on a cookie sheet.
  8. Bake for 30 minutes or until golden and bubbly.

Artichoke Stuffed Boneless Chicken

Ingredients for Artichoke Stuffed Chicken:

  • 6 boneless, skinless chicken breast halves
  • 1 clove garlic
  • 1 1/2 cans (23 oz) of artichoke hearts
  • 2 tablespoons beaten egg or egg substitute
  • 2 tablespoons milk
  • 1 cup fresh breadcrumbs
  • pinch freshly grated nutmeg
  • 1/3 cup fresh chopped parsley
  • Up to 1/2 cup chicken broth
  • salt and pepper to taste
  • paprika for garnish
  • cooking spray

Method:

  1. Preheat oven to 425 degrees F.
  2. Spray baking dish with cooking spray to prevent sticking.
  3. Pound chicken to approximately 1/2 inch thickness.
  4. Season chicken with salt and pepper to taste.
  5. Process garlic, egg, milk, breadcrumbs, artichokes, nutmeg, and half the parsley in a food processor to mix only. Artichokes should still be visible in the stuffing mixture.
  6. Divide stuffing and place onto chicken. Roll chicken and secure with toothpicks or kitchen string.
  7. Place artichoke stuffed boneless chicken into baking dish and add chicken broth.
  8. Sprinkle with paprika if desired.
  9. Bake 20 minutes or until cooked through.
  10. Garnish with leftover fresh parsley.
