Ingredients
3 medium to large cucumbers
¼ red onion, peeled and chopped
1 stalk celery
1 tablespoon olive oil
3/4 cup sour cream
1/2 cup plain yogurt
1 jalapeño pepper for heat, seeds removed (optional)
1 tablespoon lemon juice
Splash lime juice
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh cilantro, finely chopped
1 tablespoon fresh dill
1 leaf fresh mint (optional)
White pepper preferred to taste (can substitute with black pepper)
Salt to taste
Optional Toppings
Mint leaves
Avocado, sliced
Feta cheese
Lemon zest
Lime zest
Dill sprigs
Fresh tomatoes, chopped
Carrot sticks
Cucumber sticks
Celery sticks
Cucumber, thinly sliced
Croutons
Sour cream
Directions
Wash, peel, seed, and chop cucumbers
Wash and slice celery
Rinse other optional vegetables
In a large mixing bowl, mix cucumbers, celery, onion, olive oil, sour cream, plain yogurt, jalapeño, dill, parsley, cilantro, lemon and lime juice, and salt and pepper to taste
Mix well
Pour into food processor and puree until smooth and creamy
Pour mixture into a large bowl, cover
Place in refrigerator until well-chilled (at least two hours, preferably overnight)
Ladle cold soup into individual soup bowls or chilled cocktail glasses for added flair
If thinner consistency is preferred, add an ice cube before serving
Top with sour cream
Garnish with desired toppings of choice; sliced avocado, feta cheese, mint springs, dill, lemon zest, croutons, carrot or celery sticks, tomatoes
Serve cold!
