Serve as an appetizer, first course or main dish; the choice is yours.

Directions

  1. Wash, peel, seed, and chop cucumbers
  2. Wash and slice celery
  3. Rinse other optional vegetables
  4. In a large mixing bowl, mix cucumbers, celery, onion, olive oil, sour cream, plain yogurt, jalapeño, dill, parsley, cilantro, lemon and lime juice, and salt and pepper to taste
  5. Mix well
  6. Pour into food processor and puree until smooth and creamy
  7. Pour mixture into a large bowl, cover
  8. Place in refrigerator until well-chilled (at least two hours, preferably overnight)
  9. Ladle cold soup into individual soup bowls or chilled cocktail glasses for added flair
  10. If thinner consistency is preferred, add an ice cube before serving
  11. Top with sour cream
  12. Garnish with desired toppings of choice; sliced avocado, feta cheese, mint springs, dill, lemon zest, croutons, carrot or celery sticks, tomatoes
  13. Serve cold!
