You make the dough, you roll it into a big "sausage", you cut as many cookies as you need for your current batch, you secure the rest into cling film,and you save the rest. The dough can stay in the fridge for up to 4 weeks that means you don't have to worry when the next batch of cookies comes from.
It is so great that the idea has been stolen by a marketing department and it is possible to buy refrigerator cookie dough, but it's so easy to make, you should have some on hand and save your money.
Refrigerator Cookies Recipe
Ingredients:
180g (6oz) unsalted butter, softened
185g (6 1/2oz) soft brown sugar
1 teaspoon natural vanilla extract
1 egg
280g (10oz/ 2 cups and a half) flour
1 teaspoon baking powder
Method:
Lightly grease a baking sheet.
Cream together the sugar and butter until pale and fluffy. Beat in the vanilla flavouring and the egg.
Sift in the flour and mix to a firm paste. Knead lightly, turn out onto a board, and cut in half.
Place one portion on a sheet of baking paper and press lightly until about 30cm (12 inches) long and 4 cm (1 and half inch thick). Repeat with the other piece of dough, unless you are going for Mocha Spirals, in which case you need to press the second dough onto the first before starting rolling.
Roll the dough to a sausage shape about 5 cm (2 inches) in diameter and 20 cm (8 inches) long. Wrap in greaseproof paper.
Wrap and chill in the refrigerator for 30 minutes.
When required, cut off 1 cm slices, place on the baking sheets and bake at 190°C (375°F) mark 5 for 12-15 minutes. Cool the biscuits on a wire rack.Once the first batch is made, keep the rest of the dough in a cling (or transparent) film in the fridge. There are virtually hundreds of refrigerator cookies recipes, with so many flavours to choose from you will never be short or ideas. Home baked cookies bring variety and are a good money saver.
Variation on Cookies
The recipe below comes from "The baker" by Leanne Kitchen, there are as many variations as your imagination allows here are a few:
Mocha spirals: has 2 tsp cocoa powder into 1 dough and 2 tsp of coffee powder in the other.
Maple and pecan: 60 ml maple syrup added to the creamed butter mixture and rolled in finely chopped pecans
Spicy fruits : 1 tsp mixed spices and 1/2 teaspoon ground ginger added to the fur
Coconut and Orange: 1/3 cup desiccated coconut and 1/2 tsp orange essence
