Root Mash with Turnips & Sweet Potatoes

A Great Substitue for Mashed Potatoes

This is a great alternative for mashed potatoes and those interested in reducing calories, fat and carbohydrates will love it!

Wherever people turn these days, someone is on a diet. They are either counting calories, cutting back on fat, or lowering the number of carbohydrates they take in each day. It can be difficult to find the right diet, but often people find the best way to lose weight is to really do all three- to recognize and lower the amount calories that are consumed during the day, to eat a low fat diet and to reduce the number of carbohydrates each day.

Locating recipes that can help do all three are difficult to find. Here, however, is a recipe that reduces the carbohydrates, reduces the calories and fat and still maintains delicious flavor for guests or for a meal at home with the family. It is an excellent substitute for the traditional mashed potatoes, that are often high in fat, calories, and carbohydrates due to the potato content, the milk, sour cream, and cream cheese additions that people often prefer. This alternative recipe also provides great nutrition for the body.

The recipe includes turnips, which are high in vitamin C, fiber and vitamin A. They also are low in carbohydrates and calories. In addition, sweet potatoes are added, which are considered one of the most nutritious vegetables around; high in vitamin A, C and manganese. They are also lower in carbohydrates than potatoes and have wonderful color, texture, and a sweet taste.

Follow the directions for root mash below and surprise your family and/or guests. The serving size is for 6 guests.

Ingredients:

  • 3 Large Turnips
  • 3 Large Sweet Potatoes
  • 2 Potatoes
  • ¼ cup of vegetable or chicken broth
  • 2 TBS Butter or Margarine
  • ½ Cup Buttermilk
  • Salt and Pepper to Taste

Directions:

Peel the turnips, sweet potatoes, and potatoes and cut into small sections. Fill a large pot with water, add the broth and put it on the stove top on high heat. Add a sprinkle of salt to the water. When the water begins to boil, add the turnips and boil them for 15 minutes. Then add the sweet potatoes and potatoes until all of the root vegetables are soft (about 15 to 20 minutes).

Drain the potatoes in a colander and place the root vegetables back in the pot. Add the butter (or Margarine), buttermilk and mash the root vegetables until they come to a smooth consistency. Add salt and pepper to taste and place in a bowl for serving. Enjoy!

Note: If you want to add bright color to the root mash recipe, add some beets to the pot at the same time you add the turnips. The root mash will be closer to the color of the beets, they are bright and festive and they are a great addition. This is a fun recipe to make during the holidays or for Valentine’s Day.
