Liven Up Your Salads With These Delicious Recipes

Recipes for Creamy Avocado, Blue Cheese, Sweet Mustard , Herb Vinaigrette and Marjoram and Balsamic Vinegar Dressings

Use best quality ingredients for dressings to turn plain salads into something really special and delicious. All of these dressings can be stored in the fridge for about 1 week with the exception of the Creamy Avocado which should be used soon after making.

Blue Cheese Dressing Recipe

A great way to use up leftover blue cheese which goes really well with pears or livens up a plain chicken salad.

  • 50g firm blue cheese, such as Roquefort or Stilton
  • 2 tablespoons sherry or cider vinegar
  • 3 tablespoons walnut or hazelnut oil
  • 3 tablespoons sunflower oil
  • 1 teaspoon Worcestershire sauce
  • freshly squeezed lemon juice, to taste
  • freshly ground black pepper

  1. Put all the ingredients , except the lemon juice, in the bowl of a food processor and process until smooth.
  2. Add a little lemon juice and freshly ground black pepper to taste.
Sweet Mustard Dressing Recipe

A little sweeter than classic vinaigrette this dressing is delicious served with bitter salad leaves like rocket or chicory.

  • 1 tablespoon Dijon mustard
  • 2 teaspoons acacia honey
  • 1 tablespoon cider vinegar
  • 6 tablespoons extra virgin olive oil
  • sea salt and freshly ground black pepper

  1. Put all the ingredients in a screw top jar and shake vigorously until the dressing is emulsified.
  2. Add salt and pepper to taste.
Herb Vinaigrette Dressing Recipe

A really versatile dressing . The sprigs of herbs and garlic will infuse the vinaigrette the longer they are left in the dressing.

  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon white wine vinegar
  • sea salt and freshly ground black pepper
  • 1 teaspoon caster sugar
  • 7 tablespoons extra virgin olive oil
  • 1 garlic clove, halved
  • a few sprigs of fresh herbs, such as tarragon, mint or coriander

  1. Put the lemon juice, vinegar, salt and pepper to taste, sugar and olive oil into a screw top jar.
  2. Shake the jar vigorously until everything is combined and the dressing is smooth.
  3. Add the sprigs of herbs and the garlic halves.
Creamy Avocado Dressing Recipe

Delicious with a simple combination of leaves such as baby spinach, rocket or some finely shredded red cabbage.

  • 1 avocado
  • 1-2 cloves of garlic, crushed
  • 10ml lemon juice
  • 5ml caster sugar or honey
  • 125ml natural yoghurt
  • sea salt and freshly ground black pepper

  1. Combine all the ingredients in a blender and blend thoroughly.
  2. Check seasoning and serve soon after preparation.
Marjoram and Balsamic Vinegar Dressing Recipe

Delicious tossed with watercress, baby spinach, ripped up romaine and finely sliced fennel.

  • 2 tablespoons good quality balsamic vinegar
  • 6 tablespoons extra virgin olive oil
  • 1 teaspoon freshly ground black pepper
  • 3 heaped tablespoons chopped fresh marjoram

  1. Place all the ingredients in a screw top jar.
  2. Shake vigorously until all the ingredients are well combined.
  3. Check seasoning.
