Semi-Homemade Enchiladas, Alina Bradford
Here are five recipes that are simple to make, inexpensive, and inspired by Sandra Lee's Semi-Homemade meals.

Each recipe, below, incorporates healthy canned foods that can quickly be combined with other pantry staples to create a healthy meal that cost less than $10.

Semi-Homemade Enchiladas from A Can

This is a company’s-coming-over dish. It’s quick, easy, makes a lot and tastes like you spent all day making it.

Ingredients:

  • 2 cans chopped green chilies
  • 2 cans chunk chicken breast
  • 2 cans cream of chicken soup
  • 2 cans cream of mushroom soup
  • 1 can diced tomatoes
  • 1 can sliced black olives
  • 1 package flour tortillas

Directions:

  1. Drain and dump canned ingredients into a large bowl and stir well.
  2. Put two large spoonfuls of mixture into a tortilla and fold.
  3. Place into greased baking pan.
  4. Repeat until all mixture is used, layering enchiladas if needed.
  5. Cover with tin foil.
  6. Bake at 350 degrees for thirty minutes.
  7. Top with grated cheese.

Chunky Chicken Soup

This soup is really filling and low in calories. Try serving it with heat up sourdough rolls to make it a great meal. (Remember to get the rolls off of the day-old bread rack for extra savings.)

Ingredients:

  • 2 cans no salt added mixed vegetables
  • 2 cans chicken broth
  • 2 cans chunked chicken breast
  • 2 tablespoons Italian seasoning
  • ½ box of noodles of your choice

Directions:

  1. Put ingredients into a large saucepan.
  2. Cook on medium heat for thirty minutes or until the noodles are soft.

Amazing Canned Dessert

This one is a healthy dessert that everyone will love and it takes less than five minutes to make.

Instructions:

  • 1 can cranberry sauce
  • 1 8oz. can of crushed pineapple (drained)
  • 1 can fruit cocktail
  • 1 tub whipped topping

Directions:

  1. Dump all of the ingredients into a large bowl.
  2. Mix until the cranberry sauce is smooth.
  3. Serve chilled.

Sweet Potato Fluff

This is semi-homemade recipe can be served instead of mashed potatoes as a side. Plus, it’s a whole lot quicker!

Ingredients:

  • 2 cans sweet potatoes (Make sure to get the kind without syrup.)
  • 1/3 cup butter
  • 1 tsp. powdered clove
  • Pinch of salt

Directions:

  1. Drain sweet potatoes.
  2. Heat in the microwave for 3 minutes.
  3. Add butter, clove and salt.
  4. Mash, leaving a little lumpy, and serve.

Super Chili

This recipe is a hundred times better than just plain chili out of a can. Try serving it with grated cheese and toasted French bread. Most semi-homemade cooks can get a loaf of fresh French bread for only 98 cents at a local superstore, so, all told, this meal will cost about $6.

Ingredients:

  • 2 cans chili (with beans or without)
  • 1 can diced tomatoes
  • 1 can chopped green chili peppers
  • 1 can corn

Directions:

  1. Dump the ingredients into large sauce pan.
  2. Mix well.
  3. Cook on medium heat until warm.

Keeping these recipes handy will supply any semi-homemade cook with a quick arsenal of foods that can be made in no time.
