Spicy Cheese Dip

Restaurant quality cheese dip made easy. Great with tacos, chili or hamburgers.

Use this Cheese Dip to spice up your meals. The dip goes great with tacos or hamburgers and is a good compliment to a hot bowl of chili in the winter.

The quantities of ingredients listed here will result in a mildly spicy flavor. For hotter cheese dip, add more chili powder and white pepper. Jalapenos can also be added for additional spice.

Recipe, Serves 8

Ingredients

  • 1 lb American Cheese, grated (use 2% to reduce calories and fat; do not substitute fat free cheese)
  • 1 Cup Milk (2% or skim milk can be used to reduce calories and fat)
  • 1 Tbs Butter
  • 1 Tbs Flour
  • 1 Tbs Onion Flakes
  • 1 Tbs Chili Powder
  • 1 Tsp White Pepper
  • 1 Tsp Cumin
  • 1 Tsp Dry Mustard
  • 1 Tsp Garlic Powder
  • 1 Can Rotel (tomatoes with chili peppers)

Directions

  1. Melt butter in a non-stick sauce pan
  2. Add flour to melted butter and stir until flour is dissolved, developing into a thick consistency
  3. Add milk and stir until smooth
  4. Add all of the dry spices - onion flakes, chili powder, white pepper, cumin, dry mustard and garlic powder
  5. Stir until well dissolved
  6. Add cheese (approximately 1/4 at a time) and stir until melted
  7. Add Rotel to sauce; do not drain the rotel - all liquid should be poured into sauce
  8. Stir thoroughly

* For a smooth consistency, without small pieces of tomatoes or peppers, the cheese dip can be put into a blender and blended until smooth or the Rotel can be blended in a food processor before adding to the sauce.

* For thinner dip, increase the amount of milk; it is better to do this after the sauce is finished because the amount of liquid in the Rotel varies

Serve this with warm tortilla chips (used baked tortilla chips for lower calories / fat)

Use the Cheese Dip to Make Nachos:

  1. Brown 1 lb of ground beef (lean) and drain
  2. Add taco seasoning to the ground beef and 1/2 cup water
  3. Simmer until cooked thoroughly, with no remaining liquid
  4. Preheat oven to 350°
  5. Spray 13"x9" glass pan with Non-Stick Spray
  6. Layer tortilla chips in pan
  7. Pour taco meat over chips
  8. Pour cheese dip over meat
  9. Repeat layers
  10. Add grated Cheddar / Jack cheese (approx 1/2 cup)
  11. Decorate with jalapenos and bake for 10-12 minutes and serve

This will serve 8 as an appetizer or 4 people as a main dish.

Other variations for nachos:

  • Add refried beans to the taco meat
  • After nachos are removed from oven, top with grated lettuce & tomatoes and garnish with sour cream
