Quinoa (pronounced keen - wa) is a South American grain with a texture somewhat like couscous. It is an excellent source of magnesium, manganese and protein as well as possessing healthy levels of vitamin B2 (riboflavin), vitamin E and fibre. It also provides us with the minerals iron, zinc, copper and phosphorous. Quinoa is an excellent choice of grain for those who are wheat or gluten intolerant. As well as having a high protein content, it also contains all the essential amino acids making it an excellent protein source for vegans. Try the following recipe for a delicious, spicy nutritious salad. SPICY QUINOA SALAD 250ml cooked quinoa For the dressing 125ml yoghurt 60ml mayonnaise 1 tsp lemon juice 1/4 tsp cayenne pepper OR 1/2 tsp Tabasco sauce 50ml finely chopped red or green pepper 1 tsp crushed garlic 1tsp grated ginger 1 tsp ground cumin 1 tsp ground coriander 125ml chopped cucumber, with seeds removed 1tsp sugar or honey 1 tblsp olive oil 1/2 tsp salt ground black pepper Allow the cooked quinoa to cool down for approx 20 minutes. Mix together the rest of the ingredients into a dressing and combine with the quinoa. It's as easy as that !! SOME EXTRA SERVING IDEAS FOR QUINOA Add to your favourite vegetable soup to enrichen with protein Add sprouted quinoa to salads or sandwiches as you would with alfalfa sprouts Add seeds, nuts and fruits to cooked quinoa and enjoy as a porridge for breakfast
