Is there any better way to greet a gathering of Christmas carolers than with a tray filled with homemade Christmas cookies? Who wouldn't want one or two or three of these buttery spritz cookies? They're actually quite easy to make, thanks to a cookie press--a hollowed out tube fitted with a decorative cover at one end and a plunger at the other end--which you use to "spritz" the cookies onto the baking sheet. HOLIDAY SPRITZ COOKIESMakes 6 dozen cookies 1 cup (2 sticks) unsalted butter3/4 cup granulated sugar1 large egg2 1/4 cups sifted all-purpose flour1/2 teaspoon baking powder1/4 teaspoon salt2 teaspoons pure vanilla extractColored decorating sugars1. Preheat oven to 375 degrees F. In a large bowl, cream butter and sugar until light and fluffy. Add egg, flour, baking powder, salt, and vanilla. Combine thoroughly. 2. Fit a cookie press with the desired template and fill with the cookie dough. Press the cookies about 2 inches apart onto ungreased cookie sheets. Sprinkle cookies with colored decorating sugars. 3. Bake until the cookies are lightly browned, about 8 to 9 minutes. To ensure even baking, rotate the baking sheet halfway through the baking process. Transfer the cookies to a wire rack, and let cool.
